Job Requirements

  • Culinary degree
  • Minimum 2 years of experience in hotel or related culinary field
  • Supervisory experience preferred
  • Knowledge of food and beverage preparation
  • Understanding of health and safety regulations
  • Willingness to work long hours
  • Ability to exert medium physical effort including lifting up to 50 pounds

Job Qualifications

  • At least 2 years of progressive experience in a hotel or related culinary field
  • Previous supervisory responsibility preferred
  • Knowledge of food and beverage preparation techniques
  • Familiarity with health department rules and regulations
  • Understanding of liquor laws and regulations
  • Ability to work long hours when required
  • Capacity to perform medium physical work involving lifting up to 50 pounds

Job Duties

  • Assist Chef de Cuisine in recruiting and retaining a passionate service team
  • Assist Chef de Cuisine with completion of accurate inventory and month-end processes
  • Ensure maintenance of 100% culinary equipment
  • Assign and complete weekly cleaning projects
  • Lead and guide associates setting example of company culture and standards
  • Ensure daily pre-shift meetings and shift reports
  • Provide hands-on operational support and training
  • Follow up on guest issues and communicate with culinary leadership
  • Review shift reports and proactively address concerns
  • Prepare ingredients using various cutting techniques
  • Recognize quality standards in fresh produce, fish, dairy, and meat
  • Cook food accurately using multiple cooking techniques
  • Follow recipes and plating guides for consistent product
  • Ensure timely and high-quality food delivery
  • Maintain sanitized and orderly kitchen environment
  • Oversee food storage and rotation
  • Breakdown kitchen line and clean after meal periods
  • Practice safe work habits
  • Follow health department and company food safety regulations
  • Perform other reasonable duties as requested
