During training at the Brea offsite location, candidates will develop their skills in dough preparation, including measuring, cutting, and rolling dough and dumpling skins. The role requires close attention to detail when stuffing, closing, arranging, and steaming dumplings to meet the brand's exacting standards. Trainees must also maintain a clean and sanitary workspace and adhere strictly to labeling procedures, including allergen information, highlighting the emphasis on food safety and professionalism. Job Duties

  • Prepares, measures, and cuts dough
  • rolls dumpling and bun skins
  • stuffs, closes, and arranges dumplings and buns in a steamer
  • adds meat and allergen identifiers
  • steams dumplings and buns
  • maintains a clean working space and dumpling room
  • labels all items in accordance with regulations and procedures
  • attends monthly staff and dumpling meetings
  • keeps all kitchen areas clean and sanitized
  • organizes items within walk-in coolers and freezers
  • lifts and moves boxes, bags, chairs, and tables up to 50 pounds
  • assists with regular deep cleaning of the kitchen
  • maintains confidentiality regarding proprietary information including recipes and standard operating procedures
