The role of Kitchen Manager at THB Bagelry and Deli is a critical leadership position focused on ensuring the smooth, efficient operation of the kitchen in a fast-paced, high-volume environment. This role is ideal for an experienced, motivated, and dependable professional who can oversee all aspects of kitchen management. The Kitchen Manager will take responsibility for food purchasing, receiving, preparation, equipment maintenance, quality standards, safety, sanitation, cleanliness, and staffing management. Having at least one year of experience working in a busy kitchen environment is essential to thrive in this position. The Kitchen Manager will play a pivotal role in maintaining the quality and consistency of food served, aligning with the restaurant's strict recipes and portion controls to ensure customer satisfaction.

In addition to operational oversight, the Kitchen Manager will manage inventory levels by ordering food products based on set par levels, ensuring items are received in proper condition, and controlling food costs through standard usage and waste control procedures. Maintaining a clean, safe kitchen environment and ensuring compliance with regulatory food safety standards is another critical responsibility. The position also involves the maintenance and upkeep of kitchen equipment, ensuring everything functions perfectly by adhering to a preventative maintenance program. Scheduling and labor management fall under the Kitchen Manager's remit, helping meet budgeted labor goals while assisting with recruitment, hiring, coaching, and staff development efforts alongside the General Manager. This role requires a hands-on leader prepared to step in as needed to maintain operational flow and guest service standards.

The working conditions are fast-paced, with an environment that may be warm and humid due to kitchen appliances such as ovens and boilers. Physical stamina is required, as standing, walking, bending, and lifting up to 50 pounds are routine. THB Bagelry and Deli offers a 45 to 50-hour workweek spread over five days, ensuring no late-night shifts and maintaining an alcohol-free environment. Job Requirements

  • Minimum one year of high volume kitchen experience
  • Ability to stand or walk for long periods of time
  • Capable of bending and lifting up to 50 pounds
  • Willingness to work in fast-paced, high-volume kitchen environment
  • Familiarity with kitchen safety and sanitation standards
  • Preferred bilingual (Spanish) skills
  • Basic computer skills preferred
  • High school diploma or equivalent preferred

Job Duties

  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
  • Keep the kitchen area clean and safe, monitoring compliance with all regulatory standards
  • Maintain responsibility for ordering food products according to set par levels
  • Ensure that goods are received accurately and in proper condition
  • Control food cost by following proper usage standards and ensuring appropriate quantity of products removed from storage areas
  • Follow product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points
  • Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs
  • Manage hourly kitchen schedule to meet budgeted labor for kitchen
  • With assistance from the GM, recruit, hire, coach and develop kitchen staff
  • Jump in where needed to ensure guest service standards and efficient operations
