Job Description
Big Bob's Bowling is an exciting and innovative entertainment destination located in Lockhart, Texas, brought to life by the founders of Black Family Hospitality, the hospitality group renowned for exceptional establishments such as Terry Black's Barbecue and Opal's Oysters. This new venture is designed to offer a high-energy environment that seamlessly combines incredible food, craft cocktails, and a unique bowling entertainment experience that stands out in the market. Situated in the founders' hometown, Big Bob's Bowling delivers the signature hospitality and culinary excellence that the Black Family Hospitality brand is celebrated for, blending scratch cooking with a vibrant bar and bowling culture to create an unparalleled experience for guests. As a company, Black Family Hospitality is committed to quality, creativity, and community, making Big Bob's Bowling a go-to destination for locals and visitors alike.
Big Bob's Bowling is currently seeking a hands-on, high-energy Back of House (BOH) Manager to lead the kitchen operations in a fast-paced, entertainment-driven setting. The BOH Manager role entails managing food quality, leading and developing the kitchen team, controlling food and labor costs, and ensuring seamless daily execution of kitchen operations from opening to close. This role demands a dynamic leader who thrives in lively environments, can adapt to fluctuating business volumes, and maintains elevated standards for food and service delivery. The successful candidate will be deeply involved in multiple aspects of kitchen leadership, including scheduling, team coaching, recipe adherence, inventory management, and maintaining health and safety regulations.
Key responsibilities extend beyond typical kitchen management. The BOH Manager will be responsible for fostering a positive and accountable kitchen culture by coaching and training team members while maintaining strict standards consistent with Black Family Hospitality's esteemed reputation. The role requires strong oversight of food preparation systems and par levels to ensure efficient operation during peak periods, especially given the unique blend of a bowling alley's busy pace combined with a high-energy bar environment. This position also demands vigilant financial oversight, managing costs strategically to maximize profitability without compromising the quality or consistency of the food served. Through diligent inventory and waste management, the BOH Manager will contribute directly to the venue's operational success and reputation for excellence.
Additionally, the role involves ensuring the kitchen's compliance with stringent food safety, sanitation protocols, and HACCP procedures to maintain a clean, organized, and inspection-ready environment at all times. The BOH Manager will also collaborate with facility management regarding equipment maintenance to guarantee kitchen operations remain uninterrupted and efficient. The ideal candidate will possess at least two years of leadership experience in similar roles such as Kitchen Manager or Sous Chef, preferably within casual dining, bar-centric concepts, or entertainment venues. They should hold or be willing to obtain ServSafe Manager certification and be comfortable with a flexible schedule that includes nights, weekends, and holidays to meet the demands of this entertainment hotspot.
Overall, this career opportunity offers a dynamic work setting where leadership, culinary expertise, and operational acumen come together to support a bold new concept in hospitality. Embracing Big Bob's Bowling means joining a passionate team dedicated to creating memorable guest experiences through exceptional food, lively atmosphere, and outstanding service. Those looking to advance their culinary management career in a unique and growing company will find this role both challenging and rewarding, contributing to the long-standing legacy of Black Family Hospitality in their hometown of Lockhart, Texas.
