The role of Kitchen Manager at Cubby's is crucial to the company’s success. This position acts as the Person in Charge, ensuring full compliance with the FDA Food Code and all related food safety and sanitation standards. The Kitchen Manager is responsible for achieving operational goals including food safety, inventory and cost control, customer service excellence, employee training and development, and maintaining high standards for food preparation and presentation. Reporting directly to the Store Manager, the Kitchen Manager oversees daily kitchen activities, supplies management, and team performance in either the first/day or second/afternoon shifts, providing flexible scheduling options.
In this role, the Kitchen Manager makes certain that all employees have the tools and supplies necessary to perform their duties effectively. They manage ordering processes from approved vendors, supervise proper receipt and storage of products, and ensure all items adhere to FIFO (first-in, first-out) inventory control. They are also tasked with enforcing company standards for recipe compliance, quality control, and food presentation. Keeping accurate records of time and temperature logs, waste sheets, and conducting weekly inventory checks are essential duties to maintain food safety and control costs.
The Manager plays a vital role in safety and sanitation by monitoring and verifying the completion of all required logs, checking refrigeration temperatures each shift, and ensuring clean and safe working conditions. Compliance with uniform and cleanliness standards, accountability for sanitation tasks, and ADA-compliant cleanliness of aisles and walkways are enforced rigorously. Additionally, the Kitchen Manager fosters respectful and friendly customer interactions, leads by example with impeccable hygiene practices, and guarantees the availability and quality of hot bar and prepared food items.

Job Requirements
- Must be 18 years of age or older to work with kitchen equipment
- Must maintain a current, valid, and unrestricted driver's license with an insurable driving record

Job Qualifications
- 2+ years prior management experience in a food service operation or proven experience in food service operations with Cubby's
- Current ServSafe certification required
- Capable of using knives, slicers, and other food preparation equipment
- Able to provide excellence in service, perform basic mathematical calculations, read and write, and understand and follow instructions
- Must be detail-oriented and accurate
- Must have good interpersonal and problem-solving skills
- Ability to multi-task effectively in a busy environment

Job Duties
- Make certain employees have the tools and items necessary to perform their jobs
- Order food, cleaning products, paper goods, and supplies from approved vendors
- Ensure product is received, stored, and rotated following FIFO method
- Maintain company standards for food production, shelf life, recipes, product quality, and presentation
- Make certain operating systems designed to control food cost are used to include order guides, build-to forms, time/temperature logs, and waste sheet
- Hold employees accountable to following recipes
- Conduct weekly inventory for cost of sales report
