Located in Atlanta, PERC is currently seeking a dedicated Kitchen Lead to join their team. This position is full-time, requiring a five-day work week, and offers a competitive wage of $18 per hour plus tips. The Kitchen Lead plays a crucial role in maintaining the high standards of food quality and kitchen operations that PERC is known for. Reporting directly to the General Manager and Manager, this role involves executing a consistently delicious, sustainable, and quality-focused menu and service while ensuring compliance with health and safety standards.

The Kitchen Lead will serve as a key team player who helps foster a warm and approachable culture for both employees and customers alike. Responsibilities include assisting in the hiring, onboarding, and training of cooks, managing kitchen inventory and equipment maintenance, coordinating employee schedules, and ensuring efficient kitchen workflow during busy periods. The Kitchen Lead also has the responsibility of acting as an expeditor during peak times, supporting smooth and effective service to customers.

Beyond operational tasks, the Kitchen Lead supports the implementation and updating of back-of-house (BOH) standard operating procedures (SOPs) and collaborates closely with the General Manager and Store Manager to solve daily kitchen challenges and coordinate team coverage. This leadership role requires strong communication skills, the ability to work well under pressure, and dedication to maintaining a clean and safe working environment. Candidates must possess a ServeSafe Manager Certificate and be physically capable of standing for extended periods and handling heavy lifting.

Job Duties

  • Ensure compliance with all food safety standards, health codes, and regulations
  • Set a warm and approachable culture for both employees and customers
  • Assist GM in interviewing, hiring, and onboarding process for cooks
  • Train cooks to execute the menu and daily prep work
  • Monitor kitchen equipment maintenance, communicate needed scheduling to GM
  • Conduct all kitchen inventory management and ordering from PERC vendors
  • Assist GM with employee schedules, including delivery and pick-ups
  • Receive orders (train others to properly check in orders) and ensure weekly FIFO’ing and organizing is completed in coolers and dry storage
  • Assign and delegate deep cleaning tasks in accordance with BOH SOP’s
  • Assign and delegate daily prep schedules to ensure the kitchen is fully stocked for service and deliveries
  • Assist GM in implementing and updating BOH SOP’s
  • Ensure that other shop orders and deliveries are fulfilled on time
  • Act as the Expeditor during busy weekend and holiday shifts as needed (QC every dish, calling hands or running orders to guests, calling out orders to the line cooks, orchestrating line cooks to be efficient in workflow and side tasks)
  • Handles decision-making or problem-solving of BOH daily and while GM is unavailable (days off, out of office, etc.) while collaborating with the Store Manager
  • Coordinating coverage when GM is out of office
