This position reports directly to the Food & Beverage Manager or Executive Manager and operates within a dedicated team focused on collaboration and service excellence.

The Kitchen Lead plays a critical role overseeing the back-of-house operations on a daily basis. The responsibility includes managing kitchen staff, ensuring food preparation adheres strictly to standardized recipes, portion sizes, and presentation guidelines, and maintaining a smooth workflow during both peak and off-peak times. Managing food safety compliance and sanitation protocols is essential to this position, along with motivating and mentoring a diverse kitchen staff that includes both full-time and seasonal employees. The Kitchen Lead is expected to be hands-on with food preparation and line execution while balancing operational demands with team leadership. This role requires availability on weekdays and weekends, including holidays and periods of peak park attendance, making it a demanding but rewarding position for candidates who thrive in high-volume, fast-paced culinary environments. There is also a part-time availability option to support varying staffing requirements.

In addition to operational leadership, the Kitchen Lead contributes to inventory management, ordering, and quality control to ensure optimal kitchen efficiency. They assist with inventory checks, product rotation, and accurate receiving of deliveries to maintain stock levels and freshness. The role also involves administrative support, such as helping with scheduling recommendations, labor management, and maintaining training documentation for consistent staff development. Job Qualifications

  • Two plus years kitchen experience
  • Leadership or lead line cook experience preferred
  • Strong understanding of food safety, sanitation standards, and BOH operations
  • Ability to lead, motivate, and mentor a diverse team, including seasonal staff
  • Excellent communication, time-management, and multitasking skills
  • Ability to work in a high-volume environment with fluctuating demand
  • Availability on weekends, holidays, and during peak attendance periods

Job Duties

  • Lead kitchen staff during operating hours, ensuring smooth workflow and high-quality food output
  • Prepare menu items according to standardized recipes, portioning, and presentation guidelines
  • Monitor cooking times, order accuracy, and ticket flow during busy periods
  • Train, supervise, and support kitchen team members, including seasonal staff
  • Assign daily tasks and station responsibilities
  • ensure staffing levels meet operational needs
  • Model professional, positive behavior appropriate for a family-friendly environment
  • Maintain strict compliance with health codes, food safety standards, and park policies
  • Oversee cleaning schedules, temperature logs, and safe food handling practices
  • Ensure all equipment and workstations are clean, organized, and properly maintained
  • Assist with inventory counts, rotation, and storage (FIFO)
  • Communicate product needs and shortages to management
  • Help receive and inspect deliveries for quality and accuracy
  • Ensure consistent portion sizes, presentation, and recipe adherence
  • Work with management to adjust prep levels based on attendance forecasts and seasonal patterns
  • Support menu updates, specials, and allergen-friendly procedures
  • Assist with scheduling recommendations, labor management, and training documentation
  • Report equipment issues or safety concerns immediately
  • Contribute to operational improvements in efficiency, menu execution, and staff development
