Job Requirements
- Minimum one year experience as a restaurant server, expediter or food runner
- Minimum 18 years of age to serve alcoholic beverages
- High school diploma or equivalent vocational training certificate
- Any combination of education and experience which would provide the necessary knowledge, skills, and abilities to perform essential functions
- Liquor commission card and certification from alcohol awareness program required to serve alcoholic beverages
- Must be of legal age in the County of Honolulu to serve alcoholic beverages

- Knowledge of all menu items, preparation methods, and presentation standards

- Ability to work flexible shifts including days, nights, weekends and holidays
Job Duties
- Maintain complete knowledge of and comply with all department policies and service and procedures and standards
- Maintain complete knowledge of correct maintenance and use of equipment and use equipment only as needed
- Anticipate guest needs, respond promptly and acknowledge all guests, regardless of how busy or the time of day
- Maintain positive guest relations at all times
- Be familiar with all hotel services, features and local attractions/activities to respond to guest inquiries accurately
- Resolve guest complaints, ensuring guest satisfaction
- Monitor and maintain cleanliness, sanitation, and organization of assigned work areas
- Maintain complete knowledge of all menu items, prices, preparation methods/time, major ingredients, quality standards, taste, appearance, texture, serving temperature, garnish, and presentation
- Maintain knowledge of daily specials and 86's list
- Know table, seat, station numbers, room capacity, hours of operation and proper table setups and dress code
- Know all liquor brands, beers, and non-alcoholic selections, correct glassware and garnishes
- Know the characteristics and descriptions of each wine/champagne by the glass and major wines
- Abide by state liquor regulations
- Complete opening side duties such as checking station assignments, checking quality and amount of restaurant stock and supplies, setting up condiments ensuring freshness and quality, ensuring sufficient supply of silverware and chinaware, stocking condiments and supplies per standards, setting side stations with supplies and equipment, attending pre-meal meetings
- Arrange and expedite food orders accordingly, prepare food trays for delivery
- Deliver food orders to tables and serve guests within hotel standards
- Verify all food orders and special requests with servers to ensure correctness and specification
- Make all varieties of coffee
- Serve all food courses promptly, efficiently and courteously
- Guide kitchen on food order preparation to ensure optimum guest service
- Clear each course
- Remove soiled wares from tables and transport to dishwashing area
- Thank guests and invite them to return
- Serve coffee, tea and designated non-alcoholic beverages
- Remove solid wares and items promptly without inconvenience
- Ensure appropriate silverware and side plates are set when serving food orders
- Check orders according to plating guide and wipe drips/spills
- Prepare wooden tray with food orders, needed condiments, garnishes and utensils
- Complete closing duties including breaking down kitchen hot and cold lines, cleaning equipment, wiping stations and counters, restocking condiments, locking refrigerators, sending food covers to dishwasher, storing utensils and chinaware, restocking items, breaking down side stations, reporting supply shortages, communicating issues and securing supplies at shift end
- Report to manager on duty before leaving
- Perform all other duties as assigned
