The role of Lead Cook is essential within Aramark's food services operations, tasked with preparing and cooking food using established recipes and production guidelines while strictly adhering to food safety, handling, and sanitation procedures. This position requires safe and proficient handling of culinary tools and equipment, including knives, grills, fryers, ovens, and broilers, to maintain high standards of food quality and safety.

The Lead Cook not only performs hands-on cooking duties but also assumes supervisory responsibilities, including scheduling staff, delegating tasks, training employees on cooking methods and food safety practices, and ensuring compliance with Aramark's rigorous safety and sanitation policies. The position entails preparing ingredients by measuring, weighing, chopping, trimming, and peeling food items, as well as applying various cooking methods such as baking, roasting, broiling, and steaming to produce delicious and well-presented meals.

Attention to detail and organizational skills are critical for setting up workstations with necessary ingredients and equipment, maintaining cleanliness, and properly storing food according to safety regulations. The Lead Cook takes pride in maintaining excellent customer service standards, exhibiting a positive attitude toward guests, coworkers, and clients alike.

Furthermore, the role requires physical stamina to handle duties that involve lifting, bending, pushing, pulling, and prolonged standing or walking, complemented by appropriate use of uniforms and personal protective equipment (PPE) as needed. The Lead Cook may also contribute to operational logistics by producing and maintaining work schedules and preparing production records.

Job Requirements

  • Food safety certification required
  • experience as a cook or related role required
  • ability to work independently with limited supervision required
  • demonstrated knowledge of food preparation principles and sanitation
  • ability to safely handle kitchen equipment and utensils
  • physical ability to perform lifting, bending, pushing, pulling, and extended standing or walking
  • willingness to wear uniforms and personal protective equipment as required

Job Qualifications

  • Previous supervisor experience in a related role preferred
  • experience as a cook or related role required
  • ability to work independently with limited supervision required
  • proven knowledge of the basic principles of food preparation, various cooking methods, and food safety regulations such as proper food handling, sanitation, and storage
  • food safety certification required
  • demonstrates basic math and counting skills
  • demonstrates effective interpersonal and communication skills, both written and verbal

Job Duties

  • Schedules and assigns daily work activities to staff and supervises the completion of tasks
  • trains and guides staff on job duties, standard food safety and sanitation procedures, cooking methods, etc.
  • cooks and prepares food following production guidelines and standardized recipes
  • sets up workstation with all needed ingredients and equipment
  • prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items
  • safely uses all food utensils including knives
  • operates equipment such as ovens, stoves, slicers, mixers, etc.
  • bakes, roasts, broils, steams, and uses a variety of cooking methods on meats, vegetables, and other foods
  • arranges, garnishes, and portions food following established guidelines
  • properly stores food by following food safety policies and procedures
  • cleans and sanitizes work areas, equipment, and utensils
  • maintains excellent customer service with a positive attitude towards guests, customers, clients, co-workers, etc.
  • follows Aramark safety policies and procedures including food safety and sanitation
  • ensures security of company assets
  • produces and maintains work schedules and may prepare production records
