The Hotel Food & Beverage Manager position at LEGOLAND California Resort, operated by Aramark, is a pivotal leadership role focused on delivering exceptional guest experiences through effective management and development of the food and beverage department. This salaried role offers compensation in the range of $71,500 to $74,500, reflecting the importance and responsibility entrusted to this position. The manager will oversee the overall efforts of the Hotel Assistant Managers and their teams, guiding them to inspire teamwork, efficiency, and superior service quality. This role requires strategic planning in daily operations including staffing, budgeting, guest services, food safety, and maintaining high sanitation standards. The manager will play a direct role in motivating, training, and cross-training staff while monitoring department performance through key performance indicators (KPIs), financial objectives, and operational goals.
An essential aspect of this role includes financial stewardship where the manager is responsible for labor, food costs, and expense management while aligning with budget requirements. There is also an emphasis on safety and sanitation, ensuring compliance with company policies, OSHA standards, and health department regulations. Collaboration with culinary leadership to conduct food safety audits and address maintenance issues ensures that all facilities remain in optimal condition for guests and employees alike.
The manager will act as a divisional and park support contact, possibly serving on a rotational basis as manager on duty or Park Duty Director, handling operational concerns, guest issues, and emergency situations. This dynamic leadership role demands a flexible schedule, including evenings, weekends, and holidays, reflecting the nature of hotel and resort operations.
This position requires a candidate with at least three years of progressive leadership experience in food service, preferably within themed environments or hospitality. Strong financial acumen, exceptional communication, organizational skills, and the ability to foster teamwork and professional growth are critical for success. Candidates with a bachelor's degree in Food Service, Hospitality, or Business Management are highly preferred. Physical demands include lifting, standing, and working in variable conditions that may involve exposure to heat, noise, and chemicals while adhering to personal protective equipment protocols.

Job Requirements
- Education at bachelor’s degree level highly preferred
- Minimum 3 years progressive leadership experience in food service
- Strong communication and organizational skills
- Ability to work flexible hours including evenings weekends and holidays
- Knowledge of food safety and sanitation standards
- Familiarity with budgeting and financial controls
- Experience in team development and staff management
- Proficiency with Microsoft Excel and Word
- Physical ability to lift 10 to 40 pounds and work in variable environments
- Ability to wear personal protective equipment as required
Job Qualifications
- At least 3 years of progressive leadership experience in food service preferably in a themed environment
- Customer-service focused with understanding of customer expectations
- Knowledge in food and culinary design desired
- Financial knowledge in understanding budgets
- Strong communication skills both verbal and written
- Effective organizational and problem solving skills with ability to make quick decisions
- Ability to work as part of a team and develop others within the team structure
- Effective delegator and collaborator ensuring all tasks are completed
- Working knowledge of Excel and Word
- Bachelor’s degree level education highly preferred in Food Service Hospitality or Business Management
- Willingness to work flexible hours including evenings weekends and holidays
Job Duties
- Involved in and actively contributes in heading up strategic planning for the department
- Manage the operational effectiveness of the department
- Implements and enhances high level of service quality and sanitation standards within all facilities
- Ensures that all guests are served in an efficient and friendly manner
- Spends time daily in each facility to provide feedback for improving operations
- Communicates daily operational and financial objectives to the staff
- Responsible for motivating training cross-training and developing assistant manager team
- Gives input and decides on promotions and transfers
- Provides positive and corrective feedback to all staff to improve performance and KPIs
- Responsible for reaching all budgeted targets for the department
- Monitors labor hours and ensures payroll reports are accurate
- Responsible for overseeing and managing food cost
- Monitors handling of money and inventory and investigates any issues
- Utilizes guest forecasts to adjust operations ensuring good guest experience at any attendance level
- Implements and enforces company and divisional policies and procedures
- Administers progressive exemplary and disciplinary action for performance and policy regulations
- Develops and administers yearly personal development plans for staff
- Responsible for maximizing revenue and per capita spending goals
- Monitors cost controls in labor food costs other direct expenses and safety liability
- Provides input for annual budget
- Ensures all staff are knowledgeable and follow safety and sanitation requirements and guidelines
- Partners with culinary leadership to conduct regular food safety audits
- Initiates and follows up on maintenance and sanitation issues to maintain facilities in excellent condition
- Serves as MOD or Park Duty Director on a rotational basis handling operational and guest concerns and emergency situations
