The Kitchen 2nd position at PAQ, Inc. plays a vital role in supporting the kitchen lead in overseeing the preparation and cooking of high-quality dishes within the store’s kitchen operations. This full-time, non-exempt, regular role reports directly to the Lead Kitchen and requires hands-on culinary expertise as well as leadership skills to guide and coach kitchen staff. The Kitchen 2nd assists in menu planning by innovating and enhancing menu offerings based on guest feedback, market trends, and dish popularity. This position includes responsibilities such as estimating food needs, managing inventory, controlling food and labor costs, promoting strict adherence to food safety and sanitation standards, and maintaining cleanliness throughout the kitchen.

Additionally, this role demands the ability to implement food apportionment policies to control costs and consistently monitor food quality through tastings and inspections. The Kitchen 2nd acts as a mentor to new cooks and supports apprenticeship training, ensuring that the kitchen operates smoothly despite the fast-paced nature of retail food service. Physical requirements are significant and include standing for long periods, frequent lifting, and working in a hot environment near cooking equipment. Job Requirements

  • High school diploma or equivalent
  • Must be 18 years of age or older
  • Over five years of experience as a cook preferred
  • Ability to stand and walk for extended periods
  • Ability to lift and carry items up to 25 pounds frequently and up to 50 pounds occasionally
  • Ability to perform repetitive motions such as preparing food and operating equipment
  • Ability to maintain good hand-eye coordination and manual dexterity
  • Ability to work in hot and varying temperature environments
  • Ability to follow strict food safety and sanitation guidelines
  • Flexibility to work weekends, evenings and holidays
  • Must be available for typically 8-hour shifts
  • Ability to maintain clear communication and work well with a team

Job Qualifications

  • High school diploma or equivalent
  • Culinary school diploma is a plus
  • Over five years of experience as a cook preferred
  • Previous supervisory experience is a plus
  • Strong knowledge of advanced cooking techniques
  • Knowledge of food safety standards and menu planning
  • Familiarity with different ingredients, recipes, and kitchen operations

Job Duties

  • Assist in preparing and cooking a variety of complex and high-quality dishes
  • Support the planning, innovating, and implementing of menu development considering guest numbers, market conditions, dish popularity, and menu recency
  • Assist in estimating food needs, procuring supplies, and managing kitchen inventory
  • Review recipes and menus to assign prices and control food, labor, and overhead costs
  • Implement food apportionment policies for cost control
  • Manage and coach kitchen staff ensuring high standards of performance and professionalism
  • Ensure efficient and timely food production by monitoring food preparation methods, portion sizes, and garnishing
  • Conduct tastings and smell tests to ensure food quality
  • Ensure quality standards by following the FIFO methodology
  • Support high nutrition standards and strict sanitation and food safety guidelines
  • Mentor new cooks and support apprenticeship training
  • Perform other duties as assigned
