Job Requirements
- Previous general manager experience for a minimum of 1 year in fine dining
- preferred bachelor's degree in business or similar field
- availability to work evening hours, weekends, and holidays
- management work week of 50-55 hours or more
- extensive knowledge of fine wines
- ability to work with minimal supervision
- be at least 21 years of age
- Serve Safe Manager Certification or ability to obtain within 30 days
- physical ability to reach, bend, stoop and frequently lift up to 50 pounds
- ability to stand for up to 10 hours
- capacity to work in a fast-paced, high-stress environment while maintaining professionalism
Job Qualifications

Job Duties
- Increase sales by ensuring highest food and beverage quality and service standards
- supervise bar, host, and servers to maintain Olio Italian standards
- manage financial performance including revenue generation and cost controls in beverage operations
- develop short and long-term financial objectives related to liquor, beer, and wine sales
- set par levels and conduct weekly bar inventories
- work as floor manager during meal periods to support staff and engage with guests
- conduct interviews and onboarding of front-of-house personnel
- hold pre-shift meetings to prepare staff and communicate updates
- provide ongoing training on service, sales techniques, safety, and sanitation
- prepare work schedules to meet staffing needs and labor budgets
- oversee cleaning, maintenance, and housekeeping duties as per checklists
- communicate proactively with general manager and other management team members
- perform closing duties correctly
- maintain professional image and leadership during shifts
- enforce food handling and cleaning procedures for safety and sanitation
- participate in employee discipline and enforce company policies
- collaborate with Special Events Manager for private dining operations
- resolve associate and guest conflicts through service recovery
- prepare and monitor payroll records
- develop staff through regular coaching, training, and performance evaluations
- foster a team-oriented and energetic work environment
