We are currently seeking a Head Sushi Chef to join the Osaka Miami team. This pivotal leadership position requires a chef with strong fundamentals and refined techniques, capable of guiding a focused and motivated sushi team to perform at their best. As the Head Sushi Chef, you will be hands-on, overseeing the sushi bar during daily service to ensure every detail—from the preparation of rice and selection of fish to the final presentation—meets Osaka’s rigorous standards. Beyond culinary skills, this role demands strong leadership to cultivate a kitchen culture grounded in respect, professionalism, and teamwork. The successful candidate will organize prep work, maintain quality and cleanliness, mentor junior sushi cooks, and keep the team aligned and efficient during busy service times. Demonstrating calmness under pressure, clear communication, and leading by example are essential traits.
Candidates should have experience working with premium seafood, including proper handling and storage techniques necessary for maintaining the highest quality. Familiarity with contemporary Japanese or Nikkei cuisine is strongly preferred, as is experience working in upscale or internationally recognized dining establishments. The ideal chef will have 4 to 6 years of professional sushi kitchen experience, proven leadership abilities, exceptional knife skills, and a deep understanding of sushi fundamentals. Attention to detail, pride in consistency, excellent organization and time management skills, along with a professional and collaborative mindset are critical for success in this role. Candidates should also hold food safety certification or be willing to obtain it.
