Job Requirements
- Willingness to work an overnight schedule consistently
- experience in artisan bread production with knowledge of sourdough fermentation
- ability to lead a team in a high-volume bakery environment
- strong attention to detail and commitment to quality
- knowledge of food safety and cleanliness standards
- excellent communication and collaboration skills
Job Qualifications
- Deep passion and expertise in sourdough and artisan breadmaking
- experience in a high-volume production bakery or restaurant group
- strong technical knowledge of dough development, fermentation, and baking science
- leadership skills with the ability to guide, train, and inspire a team
- creativity and drive to contribute new ideas and innovations
Job Duties
- Lead overnight bread production with an emphasis on sourdough breads and long-fermentation techniques
- collaborate with the Executive Pastry Chef to develop and refine recipes, introduce new products, and ensure consistency across all outlets
- manage production for multiple channels: Copain's retail bakeries, Noble Food & Pursuits restaurants, and wholesale clients
- oversee dough mixing, shaping, proofing, baking, and packaging to ensure the highest quality standards
- maintain cleanliness, food safety, and organization throughout the bakery
- provide leadership and direction to overnight staff, ensuring efficiency and attention to detail
