The 2026 Cellar/Lab Hybrid Internship at Penner-Ash offers a comprehensive and immersive experience tailored for individuals interested in viticulture and enology. This seasonal, temporary role typically begins in late August and extends through harvest season, ending between late October and early November. The internship involves a blend of laboratory and cellar responsibilities, providing a valuable, hands-on understanding of the winemaking process from vineyard to bottle.

Interns will engage in a variety of tasks ranging from harvest preparation, cleaning, and vineyard sampling to more technical aspects such as juice and wine analysis using advanced equipment like the Y-15 and autotitrator. The role emphasizes the application of scientific analysis to inform winemaking decisions, offering interns a chance to work closely with the winemaking team to monitor fermentation, assess juice panels, and oversee daily lab tests. Proficiency in data entry, organization, and the use of software such as Excel is essential, supporting the effective tracking of wine development.

Further, the position demands physical stamina and adaptability, with duties including handling chemicals safely, sampling tanks, facilitating tank additions and inoculations, and assisting with cellar work like punch downs and pump overs. Job Requirements

  • Prefer 1 year of full-time cellar/lab experience or 2+ harvests of cellar/lab experience
  • experience with Y-15 or Spica analyzer is preferred
  • bachelor’s degree in Enology, Fermentation Science, or related field is preferred
  • must be well organized, clean, and detail-oriented
  • ability to work independently and with others at all levels of the organization
  • must have cellar proficiency
  • intermediate to advanced computer skills in Word and Excel
  • willingness to work extended hours and various shifts
  • ability to stand for long periods, occasionally reach, sit, walk, climb, stoop, or kneel
  • able to lift and carry up to 50 lbs

Job Qualifications

  • Bachelor's degree in Enology, Fermentation Science, or related field preferred
  • experience with Y-15 or Spica analyzer preferred

  • prior cellar or lab experience of at least one full-time year or two or more harvests preferred

Job Duties

  • Coordinate all routine lab analysis with enologist
  • help sample vineyards and process juice panels
  • assist with daily lab analysis for harvest
  • perform juice panels, drain and press panels using Y-15 and autotitrator
  • present data to winemaker in a timely and organized manner for quick but informed decision making
  • setup and execute benchtop trials
  • help troubleshoot lab equipment when needed
  • monitor primary fermentation including brix and temperatures using DMA for all small lot fermenters
  • enter data in excel and tracking software
  • maintain a clean and organized workspace
  • assist with cellar work as needed
  • safely and properly handle chemicals
  • sample tanks for analysis
  • facilitate tank adds and inoculations
  • perform occasional punch downs and pump overs
  • help on the sorting line
  • assist in cleanup of the winery when all lab duties are finished
