Job Requirements

  • must be able to pass mandatory screening which may include a background and credit check, and drug test
  • must be 21 years plus of age
  • must be able to obtain and maintain a current California gambling establishment team member permit, badge or license
  • able to deal effectively and interact well with customers and co-workers
  • available to work any shift including weekends, holidays and overtime
  • able to converse in English
  • able to work independently
  • able to work within a team environment
  • must provide evidence of employment eligibility in the U.S.
  • must be able to pass a mandatory drug test, criminal background and credit check

  • possess a thorough understanding of sushi techniques including rice preparation, fish slicing, and working with seaweed (nori)

Job Duties

  • Prepare and serve hand rolls made with premium ingredients, focusing on simplicity, freshness, flavor, while making sure the nori stays crispy
  • engage with guests at the sushi bar, explaining the menu, taking orders, and providing a friendly and educational experience while preparing hand rolls in front of them
  • ensure consistency in the preparation and presentation of each hand roll, adhering to established restaurant standards
  • maintain the cleanliness and organization of the hand roll bar and workspace at all times, including tools and utensils
  • monitor the freshness and quality of fish and other ingredients, ensuring all products meet high standards of quality and safety
  • work efficiently to serve customers in a timely manner, especially during peak hours, without sacrificing quality
  • collaborate with the kitchen staff and other chefs to ensure smooth operations and quick delivery of orders
  • adhere to all food safety, hygiene, and sanitation protocols in compliance with local health regulations
  • assist in restocking and maintaining ingredient inventory to ensure seamless service throughout shifts
  • contribute to menu development by suggesting new hand roll combinations and seasonal specials
  • perform other duties as assigned
