The Grill Master, also known as the Cook, plays a vital role within this dynamic team. This role is central to delivering the 'Best in Class' guest experience by preparing grilled and hot food items with precision and care, strictly following the company’s preparation and presentation standards. As a Grill Master, you are more than just a cook – you are responsible for igniting the El Pollo Loco experience with every order. Working as a Grill Master at El Pollo Loco means adhering to specific procedures for preparing, marinating, seasoning, cooking, stocking, and rotating chicken and other proteins to ensure optimal freshness and flavor. You will be expected to monitor holding times, handle food at proper temperatures, and ensure that each plate or package meets the company’s rigorous quality standards. In addition, maintaining a clean and sanitary work area, including equipment and tools, is a critical part of the role.

Job Requirements

  • High school diploma or equivalent
  • Ability to work flexible hours including evenings and weekends
  • Ability to stand for extended periods
  • Must be able to follow food safety standards and procedures
  • Ability to lift and carry moderately heavy items
  • Previous experience in a cooking or food preparation role preferred but not required

Job Qualifications

Job Duties

  • Prepare, marinate, season, cook, stock and rotate chicken and other grilled proteins according to company standards
  • Receive orders, cut cooked chicken, and arrange proteins for proper presentation on the plate or in the applicable packaging apparatus
  • Monitor holding time for grilled proteins and take corrective actions when hold time expires or when product quality fails to meet company standards
  • Maintain and ensure that all cooked proteins are at proper serving temperature
  • Inspect chicken and other raw proteins for acceptable quality standards prior to marinating or grilling
  • Clean and sanitize the entire work area including all equipment, tools, storage containers, grills and hoods
