The role of the Grill Cook at Guest Services is a vital part of their culinary operations. This position involves preparing, cooking, and serving food items on the grill, requiring both technical skill and a passion for quality food preparation. The Grill Cook works closely with the Executive Chef to coordinate daily menus and special function offerings, ensuring each meal meets the company’s high standards for taste, presentation, and safety.

As a Grill Cook, the individual will be responsible for setting up, restocking, and breaking down the grill station each day, maintaining cleanliness and organization throughout the shift. They will prepare daily specials, hot sandwiches, and side dishes, carefully following recipes and product directions. This role demands proficiency in food safety practices and sanitation, as well as the ability to operate various kitchen equipment for measuring, mixing, washing, peeling, cutting, shredding, and trimming ingredients.

The Grill Cook must also take an active role in quality control by tasting food, reading menus, estimating food requirements, and keeping accurate production records. Proper management of food waste is essential, with an emphasis on recycling or proper disposal of excess food products. This position requires vigilance in maintaining temperature logs and signage at the grill station to uphold food safety standards.

Physical stamina and mental alertness are critical for succeeding in this fast-paced kitchen environment. The Grill Cook must frequently move throughout the kitchen, lift and carry objects weighing up to 50 pounds, and withstand temperature extremes from walk-in refrigerators to grill areas. Effective communication in English with customers and coworkers is necessary, as is a willingness to report any safety concerns or equipment malfunctions promptly to management.

Job Duties

  • Responsible for setting up, restocking, and breaking down of the grill
  • responsible for the daily production of meal items and daily menu specials
  • responsible for preparing daily specials, hot sandwich production, and sides to be placed in the hot slide for service
  • follow recipes and or product directions for preparing, seasoning, cooking and tasting, meats, vegetables, and other grilled foods
  • operate kitchen equipment to measure and mix ingredients, wash, peel, cut and shred food, and trim and cut meat and poultry
  • report all malfunctioning equipment to supervisor
  • taste food products, read menus, estimate food requirements, check production, and keep records for production planning
  • control food production to ensure extra food products are recycled or disposed of properly
  • clean all equipment and utensils used in the grill prep and production area
  • maintain temperature logs and signage for the grill station
  • maintain awareness of safety issues and report them immediately to manager
