Job Requirements
- Must be at least 18 years of age
- Conversational communication skills
- Minimum 2 years of recent line cook experience including grill and sauté or culinary certificate and 1 year of recent line cook experience including grill and sauté
- Knowledge of kitchen equipment including wood/coal burning grills, broilers, dehydrators, sous vide, vector ovens, blast/recirculating chillers and cryovac
- Proficiency in all stations of the line including grill and sauté
- Knowledge of modern and classical cooking including sauté, roasting, saucier, braising and measurements
- Butchering experience
- Understanding of food safety and sanitation guidelines including temperature requirements and HACCP
- Elevated plating techniques
- Advanced product identification and seasonal availability
- Stock and sauce refinement
Job Qualifications
- Minimum 2 years of recent line cook experience including grill and sauté or culinary certificate with 1 year of recent line cook experience including grill and sauté
- Proficiency in use of various kitchen equipment
- Knowledge of modern and classical cooking methods
- Understanding of food safety and sanitation guidelines
- Skills in butchering and advanced product identification
- Elevated plating skills
- Ability to work effectively in a fast-paced culinary environment
Job Duties
- Recreate Disney recipes and alter recipes to accommodate guest dietary restrictions
- Utilize a variety of kitchen equipment including wood/coal burning grills, broilers, dehydrators, sous vide, vector ovens, and cryovac
- Prepare menu items proficiently across all line stations including grill and saute
- Demonstrate knowledge of modern and classical cooking techniques including sautéeing, roasting, saucier, and braising
- Maintain food safety and sanitation guidelines including HACCP standards
- Apply elevated plating techniques to enhance food presentation
- Refine stocks and sauces to meet Disney quality standards
