Lost Art Brewhouse is a vibrant community-focused brewery located in Walker, Michigan, known for its dedication to crafting exceptional beers paired with delicious, freshly prepared food. The Food Truck Line Cook role is essential to the smooth operation of the catering food truck. This position reports directly to the Catering Director or Owner and plays a critical role in prepping, cooking, plating, and maintaining the food quality that Lost Art Brewhouse customers expect. Line cooks will rotate through various stations, including the grill, fryers, and hot line, supporting service from opening prep through to closing cleanup. The position requires dedication, attention to detail, and the ability to work efficiently in a high-temperature, fast-moving environment where order accuracy and speed are paramount.
As a Food Truck Line Cook, candidates will master daily line execution by cooking and plating menu items precisely to recipe specifications during peak service times. They will maintain their stations clean, organized, and well-stocked to ensure uninterrupted workflow. Effective communication about ticket status and item availability is crucial to coordinating a seamless service experience. Line cooks are also responsible for maintaining stringent food safety and sanitation standards, including temperature control, proper labeling, and allergen procedures.
This role requires a minimum of one year of line or fast-casual kitchen experience or a strong willingness to learn and adapt quickly. Candidates must be physically capable of lifting up to 40 pounds, standing for extended periods, and working in high-heat conditions typical inside a food truck during summer events. We seek dependable individuals with flexible availability for variable shifts that include mornings, nights, weekends, and select holidays.

Job Qualifications
- 1+ year line or fast-casual kitchen experience or strong work ethic and willingness to learn quickly
- Reliable night and weekend availability
- Basic knife skills
- ServSafe Food Handler or Manager certification or ability to obtain within 60 days
- Previous kitchen, brewpub, or high-volume restaurant experience preferred
- Familiarity with batch prep, fryer maintenance, and temp logging systems preferred
Job Duties
- Cook and plate menu items to spec during peak service
- Maintain clean, stocked, and organized stations
- Communicate ticket times and item availability with team members
- Follow all recipes, portioning, and plating standards
- Complete opening duties including prep sheet review and station set-up
- Perform closing duties such as cooling, labeling, deep-cleaning, and storing mise
