The Food Service Worker role at Kentucky State Reformatory, operated by Aramark, is a critical position that oversees the preparation and serving of meals within a correctional facility environment. This role involves supervising inmates to ensure that meals are prepared and served according to strict production, sanitation, and safety protocols. The Food Service Worker must train, coordinate, and motivate inmate workers to effectively perform their duties in accordance with company and correctional standards. This includes managing production schedules, enforcing food safety standards, and ensuring all operations comply with security policies. The role demands a strong emphasis on maintaining a clean and sanitary environment, adhering to established safety procedures, and managing equipment and storage securely. In this position, you will also participate in meal preparation, monitor portion control, and manage inventory and order requisitions. The duty to supervise inmates while fostering a safe and efficient work environment requires excellent judgment, tact, and independent work capability.

The Food Service Worker role caters to those who have a background in food preparation or supervisory experience, particularly in correctional or similar institutional settings. Candidates should be over 18 years old, possess or be willing to obtain a food safety certification, and qualify for and maintain a correctional facility security clearance. Job Duties

  • Adhere to and maintain preparation and production guidelines according to Aramark standards by reviewing and approving production and temperature logs
  • supervise inmates in food preparation and tray assembly
  • ensure timely, efficient meal service and all Aramark guidelines are being met
  • participate in preparation and serving of meals
  • print and distribute recipes
  • direct inmates in the use of Aramark recipes and train on proper cooking procedures
  • ensure proper portions and any special dietary requirements are fulfilled
  • obtain accurate daily population counts and review with staff
  • adhere to security policies and procedures
  • ensure storage areas are locked at all times
  • ensure that all kitchen tools and equipment are returned to their designated secure area and all keys are returned and secured
  • determine work procedures, prepare work schedules and sanitation schedules while ensuring cooks, inmates and/or food service workers adhere to the assigned schedule
  • assist in conducting inventory, properly receiving and storing food and food related items
  • requisition orders as needed for approval
  • participate in the preparation, storage and assembly of meals and food items
  • follow the company’s standard of operation for food handling and storage
  • follow HACCP policies and procedures regarding proper food handling procedures
