Job Requirements
- Possession of or eligibility for a food handler's permit
- Knowledge of practices and procedures in large-scale food operations
- Understanding of personal hygiene, food handling, sanitation, and safety precautions
- Skilled in care and use of kitchen utensils and equipment
- Ability to prepare reports and keep records
- Capability to supervise and train others
- Ability to follow instructions and exercise good judgment
- Effective writing and speaking skills
Job Qualifications
- High school diploma or equivalent
- Experience in large-scale food preparation and serving
- Knowledge of food handling, sanitation, and safety practices
- Ability to supervise and train employees, patients, and volunteers
- Strong communication skills, both written and oral
- Good judgment in evaluating situations and making decisions
- Experience with personnel functions and record keeping
Job Duties
- Supervise employees in food preparation, production, and serving
- Oversee adherence to department policies and regulatory requirements
- Provide cross-coverage for all department areas
- Interview, hire, and train employees
- Assign and schedule work and manage leave requests
- Assure compliance with job descriptions, schedules, and uniform standards
- Coordinate food storage, ordering, preparation, production, and serving
- Monitor food quality through regular inspections
- Enforce food storage procedures including rotation, temperature control, and labeling
- Ensure sanitation standards by monitoring hygiene, glove use, safe food handling
- Correct employee performance to meet standards
- Requisition routine repairs and report major repair needs
- Train dietetic interns and students as assigned
