The role of the Food and Beverage Supervisor at Firekeeper Golf Course Food services is a dynamic and hands-on leadership position responsible for overseeing daily operations across several food and beverage outlets, including the Steakhouse, EDR, Grill, Buffet, Bingo Snack Bar, and Beverage service during assigned shifts. This position requires an individual who is not only adept at managing teams but also skilled in maintaining quality standards and ensuring exceptional guest experiences. The supervisor plays a critical role in training, coaching, and developing staff to uphold the Resort’s standards for food preparation, service, and safety.
Key responsibilities include managing daily activities, enforcing compliance with food quality standards, and collaborating closely with the Executive Chef and Buffet Manager to address any deviations from established service levels. The supervisor is also instrumental in labor management, ensuring that staffing levels are aligned with service demands while maintaining cost control to maximize profitability. Handling performance appraisals, setting clear expectations, and fostering a positive and productive work environment are essential aspects of the role.
In addition to operational duties, the Food and Beverage Supervisor engages directly with guests to solicit feedback and promptly resolve any complaints to uphold the Prairie Band Casino & Resort's commitment to a 100% satisfaction guarantee. Menu planning and pricing for the grill are also part of the supervisory tasks, along with maintaining safety standards and enforcing uniform and appearance policies.
This role requires versatility, at times stepping into various operational functions such as cooking, serving, cashiering, or bartending to support the team during peak times or special events like banquets. The supervisor will also work alongside Warehouse and Purchasing teams to ensure efficient operations and occasionally receive training from the Casino Food & Beverage leadership to enhance skills and operational knowledge.

Job Requirements
- High school diploma
- Must be able to meet the professional appearance standards as outlined in the Prairie Band Casino & Resort Team Member Handbook
- Must be able to function both independently, and as a member of a team
- Must meet State requirements for working or supervising in drinking establishments
- A record of satisfactory performance and reliability in all prior and current employment
Job Qualifications
- College degree or equivalent experience
- Four years in the field of food and beverage, including one year leadership experience in a multi-unit operation experience
Job Duties
- Manages the day-to-day operations of the Steakhouse, EDR, Grill, Buffet, Bingo Snack Bar, and Beverage service on assigned shift
- Ensures that all food and beverage products served meet the established specifications and standards
- Communicates variances from established standards to the Executive Chef and/or Buffet Manager
- Responsible for assisting with the hiring and development of personnel while ensuring an adequate level of labor is used to perform the required level of service
- Understands and administers performance appraisals, sets performance expectations, trains and provides coaching and operational support for Food & Beverage Staff
- Completes the required daily financial tools and reports
- Solicits guest feedback by direct interaction
- Acts immediately on any guest complaint to ensure corrections are made and the 100% Satisfaction Guarantee invocations are made
- Plans and develops Grill menus that are flavorful and popular with customers, and plans their respective pricing structure
- Institutes cost control policies, procedures and standards of performance needed to maintain and improve profitability
- Analyzes and evaluates food and beverage operation, profit and loss statements, and other current applicable information to determine if alternate courses of action are needed
- Ensures all service equipment is handled safely and with reasonable care, reporting mechanical problems to proper department
- Maintains and instructs assigned personnel as to safety policies and procedures and follows up to ensure hazards are eliminated
- Enforces all appearance and uniform guidelines and all regulatory, internal controls, policies and procedures
- May be involved in cash transactions, either as a breaker or as a replacement for the regularly scheduled cashier, during day-to-day activity
- Performs the duties of a Cook, Food Server, Beverage Server, Cashier/Host, Server Assistant, Barback or Bartender as needed to include Banquet functions
- Adheres to regulatory, departmental, and company policies in an ethical manner and encourages others to do the same
- Access to Warehouse to pick up ordered items and meet with purchasing Team Members
- Access to train with Casino Food & Beverage leadership on occasion
- Other duties as assigned
