The Food & Beverage Supervisor role at Sedgwick Heights is a critical position responsible for overseeing the daily operations of the dining services department. This role demands strong leadership and management skills to successfully hire, schedule, train, and supervise all food and beverage staff. A key responsibility is to maintain compliance with all health and sanitation regulations to guarantee a safe and sanitary environment within both the kitchen and dining areas. This includes enforcing standards like Hazard Analysis Critical Control Points (HACCP) to minimize food safety risks. The supervisor works closely with registered dietitians and meal planners to ensure menus are accurately executed, ordered, and tailored to meet residents’ special dietary needs.

This position is partly tactical and involves direct interaction with staff and customers to promote a culture of service excellence. The Food & Beverage Supervisor ensures that food preparation, presentation, portion control, and temperature regulations are strictly followed. The role also involves maintaining inventory, placing orders, and ensuring all equipment and facilities meet operational standards. Beyond operational oversight, the supervisor handles payroll, quality assurance activities, complaint resolution, and maintains detailed records related to the Food & Beverage Department's performance.

The role requires a hands-on supervisor who leads by example, motivating team members and fostering a collaborative environment between kitchen and dining room staff. Job Requirements

  • Associates degree
  • 2-4 years experience in food service
  • Prior supervisory experience preferred
  • Knowledge of state and federal health and sanitation regulations
  • ServeSafe certification preferred
  • Ability to provide exemplary customer service

Job Qualifications

Job Duties

  • Consistently provides an enjoyable dining experience and ambiance for residents and guests through exceptional service
  • Supervises the dining room staff to help ensure proper service
  • Acts as a role model and coaches team members to provide consistent execution and exemplary customer service
  • Monitors the appearance, cleanliness and safety of food preparation, storage and dish room areas, equipment, and fixtures
  • Ensure food is prepared, served, and stored according to code
  • Applies Hazard Analysis Critical Control Points (HACCP) standards to minimize or eliminate food safety hazards
  • Corrects or reports deficiencies and maintenance concerns
  • Plans and reviews the daily and weekly menu to order needed food and supplies
  • Ensure food is prepared and served per menu, with proper plate presentation, maintaining proper temperature and controlling portion size
  • Ensures residents receive diets as ordered by their Physician and that diet roster is correct at all times
  • Places all food and paper orders with vendors, maintaining professional relationships
  • Maintains par levels for inventory and supplies on hand
  • Prepares daily food production sheets
  • Ensures staff follow daily, weekly, and monthly kitchen cleaning duties
  • Actively supports, participates in and reports on Quality Assurance activities
  • Receives and resolves complaints concerning food and service using patience, active listening, and positive communication
  • Manages financial transactions related to the Food & Beverage Department
  • Serves as a liaison between the dining room and kitchen staff and promotes a collaborative team environment
  • Completes daily inspections and weekly audits to ensure all side work is accomplished
  • Directs pre-meal meetings with dining room staff and relays information and policy changes regularly
  • Approves payroll biweekly for all food & beverage employees
  • Makes suggestions about improvements in dining room service procedures and layout
  • Maintains an inventory of dining room items
  • Helps in updating and refining policy and procedure manuals for service staff
  • Confirms that all dining room open and closing procedures have been completed and that the dining room and kitchen are secured at the end of each day
  • Ensures that local and state laws and dining policies are consistently adhered to and understood
  • Ensures program is survey ready at all times
  • Assists with special events, celebrations, and projects
  • Works every other weekend, holidays and special events as assigned
