The Food and Beverage Manager role at Wilmington Convention Center is a critical leadership position responsible for managing all food and beverage services throughout the facility. This includes support for banquets, meetings, bars, and concessions to ensure efficiency, consistency, and adherence to the highest quality standards. The manager oversees the presentation and service of food and beverage products, guaranteeing that operations align with established quality benchmarks. Responsibilities extend to maintaining smooth service coordination with kitchen staff, fulfilling service requirements for banquet and concession event orders, managing bar beverage inventories and supplies, and ensuring compliance with liquor control regulations.
This full-time exempt position reports to the Food and Beverage Director and requires the management of staff training, scheduling, payroll accuracy, inventory controls, and adherence to health and safety standards, including maintaining high Health Department scores. The role demands strong organizational, communication, financial management, and interpersonal skills to handle multiple events effectively. Additional duties include staff supervision, hiring, training, and performance appraisal. The position may also serve as the "Manager on Duty" for events when required.
Candidates must have an associate's degree in hospitality management or related field, with experience equivalency considered, alongside at least three years of food service management experience in settings like restaurants, hotels, or country clubs. They should demonstrate knowledge of banquet services and operations and possess a strong customer service orientation. Proficiency in Microsoft Office and the ability to maintain Serve-Safe certification are essential to this role. Flexible availability for irregular hours, including weekends and evenings, is necessary due to event schedules. The role is physically demanding, requiring substantial walking, standing for long periods, lifting up to 50 pounds, and managing equipment. Job Duties
- Fulfill appropriate service requirements per each Banquet Event Order
- coordinate with kitchen staff and other functional areas on timing and production of service
- manage break-down activities ensuring event areas and service hallways are clean and orderly
- fulfill service requirements per each Concession Event Order
- manage full operations of concession area during events
- ensure staff is properly trained for food and alcohol service
- maintain proper cash handling and inventory in accordance with ASM policies
- ensure transfer sheets are accurate and complete
- manage beverage inventories, order supplies, receive orders, and follow liquor controls
- ensure bars operate effectively according to Savor Safe Beverage Program
- schedule labor within fiscal budget for events
- maintain payroll and time sheet accuracy
- order and maintain inventory of linens, uniforms, and small ware
- reconcile point-of-sale systems and revenues
- ensure maintenance of a Health Department score of 95 or higher
- hire and train service staff
- conduct pre-shift meetings
- participate in pre-function and client meetings
- maintain active role in hospitality community and professional associations
- supervise all wait, bar, and concessions staff
- interview, hire, train, appraise, discipline, and resolve staff issues
- may act as Manager on Duty during events
