The Food and Beverage Manager position at the Wilmington Convention Center plays a crucial role in managing all food and beverage operations within the facility. This full-time exempt role reports directly to the Food and Beverage Director and involves overseeing the delivery of high-quality food and beverage services across multiple areas including banquets, meetings, bars, and concessions. The manager ensures these services operate efficiently and consistently, strictly adhering to the Wilmington Convention Center's quality standards.

Key responsibilities include managing banquet event orders and concession event orders, coordinating with kitchen staff and other departments to ensure smooth service execution, overseeing break-down activities post-events, and maintaining cleanliness and order throughout service areas. Additionally, the manager is responsible for training staff on food and alcohol service protocols, managing inventory and cash handling, and complying with all health and safety regulations to maintain a health department score of 95 or higher. Another important part of the role is ensuring adherence to liquor control laws and the Savor Safe Beverage Program while managing beverage inventories and supplies.

Administrative duties encompass scheduling labor within budget constraints, maintaining payroll accuracy, ordering and tracking inventory of linens, uniforms, and other small wares, and reconciling point-of-sale systems and revenue accounts. The Food and Beverage Manager also plays a supervisory role, leading hiring, training, performance appraisals, and disciplinary processes for wait staff, bar staff, and concession employees, as well as other staff during major events. The person in this role may occasionally act as the Wilmington Convention Center's Manager on Duty during events.

The ideal candidate will have at least an associate’s degree in hospitality management or a related field or equivalent experience, along with a minimum of three years of food service management experience in environments such as restaurants, hotels, or country clubs. Demonstrated knowledge of banquet services and operations is essential. Candidates must exhibit strong customer service orientation, attention to detail, excellent communication skills, proficiency in managing multiple events efficiently, and a solid understanding of financial management including budgeting. Proficiency in Microsoft Office and maintain Serve-Safe certification are also required. The ability to work irregular hours including weekends and evenings, and handle physically demanding tasks such as lifting and standing for extended periods is necessary.

Job Duties

  • Manage all food and beverage services for the facility including banquets, meetings, bars, and concessions
  • Ensure all food and beverage services operate efficiently within quality standards
  • Oversee presentation and service of food and beverage products to maintain highest quality
  • Coordinate with kitchen staff and other departments on service timing and production
  • Manage break-down activities and maintain cleanliness post-events
  • Train staff on food and alcohol service protocols
  • Manage beverage inventories, order supplies, and comply with liquor control regulations
  • Schedule labor within fiscal budget for each event
  • Maintain payroll and timesheet accuracy
  • Order and track inventory of linens, uniforms, and small wares
