The Director of Food & Beverage role is vital to the continued success of the property’s food and beverage operations. This leadership position requires overseeing all functions related to food and beverage, including restaurants, bars, room service, and employee cafeterias. The director will be responsible for coordinating, supervising, and directing all departments under food and beverage to maintain high-quality products and services that consistently meet guest expectations. Job Requirements
- Must be able to work long hours sometimes
- capable of exerting up to 50 pounds of force occasionally and/or 20 pounds frequently or constantly in physical tasks
- must approach all interactions in an attentive, friendly, courteous and service-oriented manner
- maintain regular attendance as required by scheduling
- uphold high standards of personal appearance and grooming including wearing the proper uniform and nametag
- always comply with management standards and regulations for safe and efficient operations
- maintain a warm and friendly demeanor
- be attentive, friendly, helpful and courteous to guests, managers and fellow employees at all times
- able to prepare and submit reports in a timely manner
- organize and conduct regular department meetings
- cooperate in menu planning and preparation
- ensure timely purchase of food and beverage items within budget
- oversee employee cafeteria operations
- ensure compliance with liquor laws and health and sanitation regulations
- ensure departmental compliance with standard operating procedures
- train department heads on standard operating procedures, report preparation and technical job tasks
- attend and/or conduct departmental and hotel training such as customer service
- interview candidates for front-of-house food and beverage positions and follow hiring standards
- must participate in meetings and training as required by management
- perform other duties as requested by management
Job Qualifications
- At least 6 years of progressive experience in a hotel or a related field
- or a 4-year college degree and at least 3 years of related experience
- or a 2-year college degree and 4 or more years of related experience
- proficiency in Windows and company-approved spreadsheets and word processing
- knowledge of food and beverage preparation techniques, health department rules and regulations, liquor laws and regulations
- ability to convey information and ideas clearly
- ability to evaluate and select among alternative courses of action quickly and accurately
- strong initiative and multitasking skills
- effective problem-solving and ability to meet deadlines
- ability to assimilate complex information from diverse sources
- effective listening and conflict resolution skills
- basic financial literacy including understanding financial information and data
Job Duties
- Supervise all food and beverage personnel
- respond to guest complaints in a timely manner
- prepare the food and beverage budget and monitor department performance
- perform necessary follow-up including forecasting
- monitor industry trends and take appropriate action to maintain competitive and profitable operations
- work with other Executive Committee members and keep them informed of food and beverage issues
- coordinate and monitor all phases of loss prevention in the food and beverage department
