The Food & Beverage Manager role at Mirbeau is a critical leadership position reporting directly to the General Manager of the property. This individual is responsible for overseeing all culinary and food service operations, ensuring that every guest interaction is warm, intentional, and aligned with the high standards of excellence set forth by Mirbeau and Forbes. The position offers a competitive salary ranging from $65,000 to $80,000 per year and emphasizes a comprehensive approach to hospitality management, encompassing guest service, daily operations, team leadership, and administrative financial responsibilities.

In this role, the Food & Beverage Manager will lead their team through thoughtful hospitality, ensuring that service across all spa and dining venues is polished and responsive to guest needs. They will maintain expert knowledge of menus, beverage programs, and spa offerings to guide guest interactions confidently, while proactively managing feedback and resolving issues with professionalism and discretion. Safety and guest well-being are paramount, with responsibilities including managing intoxicated or disruptive guests and effectively handling incidents in accordance with property procedures.

Operational oversight includes managing front-of-house daily activities such as reservations, guest flow, floor plans, and maintaining cleanliness and readiness across all dining and service areas. The manager also ensures that all food and beverage offerings meet quality standards, adhering strictly to recipes and specifications. Supporting staff needs and utilizing point-of-sale systems accurately are also key functions.

Team leadership is a vital component of this role. The Food & Beverage Manager collaborates closely with the Chef de Cuisine to synchronize front-of-house and back-of-house operations and provides real-time coaching, mentoring, and training to foster continuous improvement and accountability among staff. They play an integral role in recruitment, onboarding, and performance management, promoting a culture of respect and excellence.

Administrative duties include schedule management, inventory control, financial performance review through sales, labor reports, and profit and loss statements, and ensuring full compliance with labor, health, and sanitation regulations. The manager also monitors staff professionalism to ensure alignment with Mirbeau’s refined hospitality expectations.

This position requires an individual with a strong background in high-volume fine dining or elevated hospitality, a degree in Hospitality Management or related field, and at least five years of progressive management experience. The ideal candidate will possess strong communication skills, the ability to multitask in fast-paced environments, a polished and friendly presence, and technological proficiency with POS and office software. Availability to work evenings, weekends, and holidays as business demands is essential.

Job Requirements

  • Associate’s degree or higher required
  • Minimum of 5+ years of progressive management experience in a high-volume, fine dining or elevated hospitality environment
  • Must be available to work evenings, weekends, and holidays as business demands

Job Duties

  • Deliver a warm, elevated guest experience across spa and dining venues in alignment with Forbes and Mirbeau service standards
  • Ensure prompt and polished food and beverage service property-wide, adjusting service execution to meet guest expectations and business demands
  • Maintain comprehensive knowledge of all menus, beverage programs, spa offerings, and room packages to confidently guide guest interactions
  • Proactively manage guest feedback, concerns, special requests, and complaints with professionalism, discretion, and effective guest recovery
  • Recognize and appropriately manage intoxicated or disruptive guests, prioritizing the safety, comfort, and well-being of guests and staff
  • Properly respond to, document, and report all guest and employee incidents, accidents, and emergency or safety situations in accordance with property procedures
  • Collaborate cross-functionally with all departments to align F&B operations with property-wide guest service
  • Attend scheduled management meetings, special events, and Banquet Event Order reviews
  • Collaborate with Sales and Events teams to ensure successful execution of banquets, special events, and property promotions
  • Oversee daily FOH operations across all dining areas, ensuring smooth operations and consistent execution
  • Manage reservations, guest flow, and floor plans to optimize seating, service pacing, and overall dining experience
  • Ensure cleanliness, organization, and readiness of all dining areas, service stations and BOH areas for each service period
  • Maintain thorough knowledge of all food and beverage offerings, including ingredients, preparation methods, presentation standards, and allergen information
  • Ensure all food, beverages, and service adhere to published recipes and specifications
  • Support staff with day-to-day needs related to service, equipment, and food supplies
  • Utilize POS systems accurately for order entry, check management, voids, corrections, and end-of-day reporting
  • Collaborate closely with the Chef de Cuisine to ensure alignment between FOH and BOH operations
  • Provide real-time coaching and mentorship that reinforces service standards, recognizes strong performance, and addresses areas of opportunity
  • Conduct regular training sessions and staff meetings to strengthen product knowledge, sales performance, and guest service standards
  • Lead by example, fostering a culture of accountability, respect, and continuous improvement
  • Collaborate with HR and senior leadership to address performance and disciplinary matters
  • Assist with interviewing and hiring of FOH team members, and support onboarding and new hire documentation processes
  • Develop and manage FOH schedules aligned with business forecasts, service standards, and payroll budgets
  • Oversee beverage inventory management including ordering, receiving, inventory controls, wine lists, and menu maintenance
  • Review and analyze financial performance through daily sales and labor reports, monthly P&L statements, and departmental budgets
  • Partner with the Chef de Cuisine on departmental planning, budgeting, forecasting, and financial reviews
  • Provide forecasting figures to accounting accurately and timely
  • Ensure accurate and timely completion of payroll weekly
  • Monitor staff appearance, conduct, and professionalism
  • Ensure adherence to Mirbeau HR policies, payroll procedures, and operational standards
  • Maintain compliance with all labor, health, and sanitation regulations
