The role of Food & Beverage Director at Great Maple Anaheim is a pivotal senior leadership position responsible for overseeing the complete spectrum of food and beverage operations. Reporting directly to the CEO and COO, this exempt position ensures that all outlets maintain elevated guest experiences, uphold rigorous brand standards, and achieve financial goals. The F&B Director plays a crucial role in mentoring management teams, working collaboratively with culinary and bar leadership, and ensuring strict compliance with California labor, health, and safety laws. With a focus on strategic planning and hands-on leadership, the Food & Beverage Director drives service excellence, operational consistency, and team culture, while fostering strong partnerships with Disney property leadership. Managing multiple outlets requires adaptability and attention to detail to optimize menu execution, guest satisfaction, and cost control.

This leadership role demands a seasoned professional with 5 or more years of progressive experience in food and beverage, hotel, or multi-outlet operations management. The successful candidate will hold current California RBS and ServSafe Manager certificates and exhibit strong financial acumen, proficiency with POS systems and schedule management tools, and a comprehensive understanding of labor laws and compliance standards. The position requires physical stamina including standing for extended periods and occasionally lifting up to 30 pounds, with a flexible schedule that accommodates mornings, evenings, weekends, and holidays.

With responsibilities ranging from team development and performance management to guest engagement and financial oversight, the F&B Director ensures consistent operational readiness and product quality. Job Requirements

  • Bachelor’s degree in hospitality, business, or related field preferred
  • minimum 5 years leadership experience in F&B or hotel management
  • current California RBS and ServSafe Manager certificates or able to obtain within 30 days
  • ability to stand and walk for 6-8 hours
  • lift up to 30 lbs
  • flexible availability including weekends and holidays
  • strong communication and interpersonal skills
  • proficiency in technology including POS and scheduling software
  • knowledge of California labor and safety regulations
  • ability to lead and motivate diverse teams

Job Qualifications

  • 5+ years progressive leadership experience in food and beverage, hotel, or multi-outlet operations
  • current California RBS and ServSafe Manager certificates (or within 30 days)
  • strong financial acumen with experience in P&L review, labor management, cost analysis, and forecasting
  • proficiency in POS systems, HotSchedules, Excel/Sheets
  • bilingual English/Spanish preferred
  • ability to stand 6-8 hours, lift 30 lbs, and support outdoor/outlet operations as needed
  • ability to work flexible schedules including mornings, evenings, weekends, and holidays
  • strong knowledge of California labor laws, food safety, and compliance requirements
  • proven experience leading and developing management teams

Job Duties

  • Mentor and develop managers and hourly staff toward excellence, accountability, and consistent performance
  • host leadership meetings, pre-shifts, trainings, and team development sessions across all outlets
  • hold managers accountable for adherence to service standards, cleanliness, ambiance, and brand values
  • maintain strong floor presence during peak service periods ensuring leaders model hospitality
  • engage with guests and resolve issues promptly, diplomatically, and professionally
  • monitor and achieve labor, COGS, service charge, and operational cost targets
  • review weekly P&L, identify variances, and implement corrective strategies
  • communicate effectively with corporate, HR, Disney leadership, and property teams
  • ensure strict compliance with health, safety, and labor laws
  • promote Great Maple’s core values and Culture Keeper principles
  • demonstrate professionalism, punctuality, and consistent brand representation
  • oversee performance management, coaching, corrective action, and succession planning
  • partner with culinary and bar teams to optimize menu execution and new offerings
  • conduct regular inspections of outlets for readiness, cleanliness, and guest experience
  • maintain strong, positive professional relationships with Disney and hotel leadership
  • enforce food safety, sanitation, cleanliness, and uniform standards
  • lead by example in safety awareness and emergency preparedness
  • promote safe working conditions and enforce all company and property protocols
  • recognize and celebrate individual and team success
  • address conflict or misconduct proactively and constructively
  • foster a respectful, inclusive, motivated, and collaborative work environment
  • plan expenditure in accordance with budget parameters and location needs
  • ensure scheduling aligns with business needs while meeting budgetary goals
  • maintain accurate inventory and ordering practices
  • protect physical assets through repairs and maintenance
  • serve as a reflection of ownership to all business relationships including vendors, stakeholders, cast members, guests, financial investors, and media
