Job Requirements

  • High school diploma, GED certification or equivalent
  • two years food preparation experience in a restaurant or food service including one year supervisory experience
  • must successfully complete the New Mexico Food Handlers course
  • must pass a stringent background investigation
  • must pass pre-employment and random drug screenings
  • ability to lift 50 lbs
  • flexible schedule including weekends and holidays
  • available to work overtime as required
  • ability to work indoors and outdoors in varying weather conditions
  • must adhere to safety protocols to mitigate hazards such as smoke, dust, odors, and noise
  • physical ability to perform activities including crouching, bending, feeling, finger dexterity, grasping, hearing, kneeling, lifting, pulling, pushing, reaching, seeing, walking, standing, stooping, and talking for extended periods
  • punctual and regular attendance required

Job Qualifications

  • High school diploma or GED certification
  • two years of food preparation experience in a restaurant or food service including one year supervisory experience
  • knowledge of culinary techniques and food preparation methods
  • skills in developing banquet menus and accommodating dietary preferences
  • ability to lead, motivate, and delegate tasks effectively
  • strong organizational and communication skills
  • ability to supervise kitchen staff and manage personnel issues
  • flexibility to work in a dynamic environment with shifting priorities
  • ability to write standard reports and documents
  • knowledge of buffet line operations and food safety temperature requirements
  • knowledge of tribal, federal, state, and local sanitary regulations
  • knowledge of casino purchasing requirements is desirable

Job Duties

  • Assist the Sous Chef/Banquet Chef with training line cooks and preparing work schedules
  • ensure kitchen recipes and food production schedules are followed
  • maintain par levels by preparing storeroom requisitions
  • assure kitchen staff adhere to sanitary, safety, and quality standards
  • oversee food preparation for consistency, taste, and presentation
  • ensure cooperation between kitchen and restaurant staff for optimal guest service
  • assign cleaning duties and maintain cleanliness of kitchen and storage areas
  • report and follow up on necessary equipment repairs
  • monitor and log food temperature requirements
  • enforce personal sanitation standards among staff
  • investigate and resolve guest complaints about food quality and service
  • open and close kitchen as necessary
  • enforce safe food handling temperatures and use of safety gloves during preparation
  • prevent food overproduction to minimize waste
  • perform additional duties as assigned
  • maintain punctual and regular attendance according to schedule
  • build professional relationships supporting a collaborative work environment
  • cooperate with team promoting respect, honesty, and integrity
