Job Requirements

  • high school diploma or ged certification or equivalent
  • two years food preparation experience in a restaurant or food service capacity including one year supervisory experience
  • successfully complete the new mexico food handlers course
  • pass stringent background investigation
  • pass pre-employment and random drug screening
  • flexibility to work weekends and holidays
  • ability to lift 50lbs
  • punctual and regular attendance
  • ability to work indoors and outdoors in various weather conditions

Job Qualifications

  • knowledge of culinary techniques and banquet menu development

  • knowledge of casino purchasing requirements desirable

Job Duties

  • Assist sous chef or banquet chef with training line cooks
  • prepare weekly and daily work schedules
  • ensure kitchen recipes are followed
  • oversee food preparation to meet quality and safety standards
  • maintain cleanliness and orderliness of workstations and storage areas
  • assign daily cleaning tasks
  • advise management on equipment repairs and follow up
  • ensure proper food temperature controls and log maintenance
  • investigate and resolve guest complaints
  • open and close kitchen as necessary
  • ensure proper food handling and use of gloves
  • prevent food waste
  • perform additional duties as assigned
  • adhere to attendance policy
