Job Requirements

  • High school diploma or GED certification
  • two years food preparation experience in restaurant or food service
  • one year supervisory experience
  • successfully pass stringent background investigation
  • complete New Mexico Food Handlers course within 30 days of hire
  • ability to lift 50 pounds
  • work flexible schedule including weekends and holidays
  • adhere to attendance policy
  • willingness to work outdoors in inclement weather
  • able to perform physical tasks such as crouching, bending, feeling, finger dexterity, grasping, hearing, kneeling, lifting, pulling, pushing, reaching, seeing, walking, standing, stooping, talking

Job Qualifications

Job Duties

  • Assist Executive Sous Chef/Banquet Chef with training line cooks
  • prepare weekly work schedules and daily break schedules for pantry staff
  • ensure kitchen recipes are followed
  • prepare storeroom requisitions to maintain par levels
  • assure kitchen staff work in a sanitary, safe and productive manner
  • adhere to standard recipes and plating instructions
  • prepare quality food in a timely fashion
  • monitor quality, taste, and presentation of food
  • oversee food preparation processes for consistency and standards adherence
  • ensure cooperation among kitchen and restaurant service employees
  • maintain clean and orderly kitchen workstations and storage areas
  • assign daily cleaning tasks
  • advise on and follow up equipment repairs
  • ensure proper temperature requirements and complete temperature logs
  • enforce personnel personal sanitation standards
  • investigate and resolve guest complaints about food quality/service
  • open and close kitchen as necessary
  • knowledge of proper safe food handling temperatures
  • ensure appropriate use of safety gloves
  • control food preparation amounts to prevent waste
  • perform additional assigned duties
  • ensure punctual and regular attendance
  • build professional relationships and support collaborative work environment
  • promote mutual respect, honesty, and integrity
