Job Requirements

  • High school diploma or GED certification
  • two years food preparation experience including one year supervisory experience
  • ability to pass stringent background investigation
  • completion of New Mexico Food Handlers course within 30 days of hire
  • flexibility to work weekends, holidays, and overtime
  • ability to perform physical activities including crouching, bending, lifting up to 50lbs, pulling, pushing, reaching, walking, standing for extended periods, stooping, kneeling, talking, hearing effectively
  • willingness to work indoors and outdoors in varying weather
  • adhere to attendance policy for punctuality and regularity

Job Qualifications

  • High school diploma or GED certification
  • minimum two years of food preparation experience in restaurant or food service
  • at least one year of supervisory experience
  • knowledge of culinary techniques and banquet food preparation
  • skills in menu development and customization
  • strong leadership and team motivation abilities
  • excellent organizational skills
  • effective verbal and written communication skills
  • ability to supervise kitchen staff and manage personnel issues
  • flexibility to work in dynamic, fast-paced environments
  • ability to write standard reports
  • understanding of buffet operations
  • knowledge of food/drink safety temperature requirements
  • familiarity with casino purchasing regulations
  • knowledge of sanitary regulations at tribal, federal, state, and local levels

Job Duties

  • Assist Executive Sous Chef/Banquet Chef with training line cooks
  • prepare weekly and daily work schedules for kitchen staff
  • ensure compliance with kitchen recipes and plating instructions
  • oversee daily food production for appetizers, salads, soups, sauces, entrées, and vegetables
  • ensure quality and presentation standards of food served
  • maintain kitchen workstation and storage cleanliness
  • assign daily cleaning tasks
  • report necessary equipment repairs and follow up
  • monitor food temperature requirements and complete logs
  • enforce personal sanitation standards
  • resolve customer complaints about food quality/service
  • open and close kitchen as necessary
  • ensure safety gloves are worn when appropriate
  • prevent food overproduction to minimize waste
  • perform additional duties as assigned
  • maintain punctual and regular attendance according to policy
