The Multi-Outlet Food and Beverage (F&B) Manager role at Hotel Heron is a key leadership position reporting directly to the Director of Food and Beverage. This exempt position is tasked with leading a talented team of hospitality professionals across multiple F&B outlets within the hotel, including bars and dining venues. The position requires a hands-on manager who excels in a fast-paced, high-expectation environment, capable of orchestrating seamless operations in a dynamic, often high-pressure setting. The manager will collaborate closely with outlet managers, culinary teams, and other departments to ensure consistency in service delivery, adherence to brand standards, and exceptional guest experiences.

A significant component of the role involves beverage program leadership—designing and evolving cocktail, wine, beer, and non-alcoholic beverage selections that align with the hotel’s concept, seasonality, and market trends. The manager will also be responsible for vendor relations, negotiating pricing, managing inventories and controlling costs to maintain profitability. Leadership duties extend to recruiting, mentoring, and developing staff, fostering a culture of professionalism and continuous improvement, and creating training programs to elevate beverage knowledge and service quality.

The guest experience is paramount in this role, with the manager handling VIP guests, coordinating events and promotions that enhance the hotel’s brand, and managing service recovery with care and professionalism. Operational compliance, including health, safety, and alcohol service regulations, is rigorously maintained to assure high standards and a safe environment.

Job Duties

  • Oversee daily operations across multiple F and B outlets ensuring consistency in service quality and brand standards
  • Collaborate with outlet managers and culinary teams to align service execution and guest experience
  • Maintain a strong floor presence especially during peak service periods
  • Design implement and continuously evolve cocktail wine beer and non-alcoholic beverage programs
  • Curate wine lists and bar menus aligned with concept seasonality and market trends
  • Establish and maintain vendor relationships negotiate pricing and manage product selection
  • Monitor beverage cost inventory and waste to ensure profitability
  • Recruit train and mentor outlet managers bar managers sommeliers and service staff
  • Develop training programs to elevate beverage knowledge and service standards
  • Foster a culture of accountability professionalism and continuous improvement
  • Ensure a consistently high level of service across all outlets
  • Handle VIP guests special events and service recovery situations with professionalism
  • Collaborate on events activations and promotions that enhance the brand and drive traffic
