The Food & Beverage Director position at Westin/Solea Carlsbad Resort & Spa involves directing and organizing all Food & Beverage functions within the hotel's outlets. This role is integral to maintaining high standards of food and beverage quality, service, and merchandising, aimed at maximizing profits and enhancing guest experience. The director plans and oversees administration and operational strategies across various outlets including restaurants, bars, and in-room dining services. Leading a team requires effective hiring, training, coaching, and career development to ensure exceptional guest service and associate satisfaction. The Food & Beverage Director is tasked with coordinating special events, managing schedules, and guaranteeing that all outlets operate profitably while consistently delivering high-quality food, service, cleanliness, and merchandising. The ideal candidate will have a culinary, sales, and service background coupled with 4-6 years of experience in food and beverage operations and management. Professional certifications such as a current Food Handler's Card and TIPS certification are mandatory, along with the ability to obtain or maintain any government-required licenses.

Job Requirements

  • High school or equivalent education
  • 4-6 years experience in food and beverage operations and management
  • Culinary, sales and service background
  • Up to date Food Handler's Card
  • TIPS certification
  • Ability to obtain and/or maintain government required licenses
  • Good verbal and written communication skills
  • Knowledge of mathematical calculations and computer accounting programs
  • Ability to work with moderately complex computer systems
  • Familiarity with federal, state and local employment and civil rights laws

Job Qualifications

  • Knowledge of complex mathematical calculations and computer accounting programs
  • Budgetary analysis capabilities
  • Ability to access and accurately input information using moderately complex computer systems
  • Thorough knowledge of federal, state and local employment laws including civil rights and labor relations
  • Leadership capabilities in a team environment

Job Duties

  • Plan and direct the functions of administration and planning of the outlets to meet the daily needs of operation
  • Support and manage the hotel outlets while working closely with the Assistant General Manager and other hotel department managers
  • Responsible for short and long term planning of all outlets including restaurant, bar, and in-room dining
  • Ensure effective hiring, training, coaching, and career development
  • Lead and coach the team towards achieving exceptional guest service and associate satisfaction results
  • Develop and implement creative strategies for revenue enhancement and cost containment
  • Develop and recommend the budget, marketing plans and objectives and manage within those approved plans
  • Plan, coordinate and manage special events and holiday functions
  • Implement effective control of food, beverage and labor costs
  • Establish and achieve predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion
  • Regularly review and evaluate customer acceptance and recommend new operating and marketing policies as needed
  • Continuously evaluate the performance and encourage improvement of personnel in the food and beverage department
  • Plan and administer a training and development program
  • Oversee departmental matters as they relate to federal, state and local employment and civil rights laws
  • Monitor hotel activities and troubleshoot problems
  • Operate word processing program in computer
  • Perform general cleaning tasks using standard hotel cleaning products
  • Additional duties as necessary and assigned
