The Food and Beverage Senior Department Head role at Fairmont Grand Del Mar is a pivotal leadership position responsible for managing multiple F&B outlets, banquet and bar operations, and their respective teams. This role involves overseeing renowned outlets such as Amaya Restaurant, Lobby Bar, IRD, Pool, Cent’Anni, Clubhouse Grill, and banquet functions, ensuring operational excellence and guest satisfaction. Working closely with the food and beverage and culinary management teams, the incumbent is tasked with driving continuous improvements in service quality, operational efficiency, and financial performance.
With a salary range of $85,000 to $95,000 USD, this full-time senior leadership role requires strategic planning, team development, and hands-on management. The incumbent will be responsible for forecasting, scheduling, conducting training sessions, ensuring adherence to brand standards, monitoring performance metrics, managing costs, and controlling inventory and waste. The ability to cultivate a collaborative and motivated team, maintain superior standards of hygiene and service, and efficiently handle guest concerns is essential. Job Requirements
- Minimum five years of restaurant management experience at department head level
- College degree preferred in hotel management, restaurant management, or business administration
- Excellent English proficiency in speaking, reading, and writing
- Strong leadership and operational management skills
- Ability to oversee multiple outlets and diverse teams
- Proficiency in food and beverage cost control and budgeting
- Experience with training and staff development
- Knowledge of human resources functions related to interviewing, evaluating, discipline, and termination
- Capability to manage guest satisfaction and complaint resolution
- Ability to work flexible schedules including evenings, weekends, and late nights
- Familiarity with hotel operations, point of sale systems, and maintenance protocols
Job Qualifications
- Excellent proficiency in English, including reading, writing, and speaking

Job Duties
- Manage all F&B outlets, banquet and bar operations, and colleagues daily
- Develop goals and strategies to accomplish operational objectives
- Forecast and schedule staffing using hotel tools and guidelines
- Oversee initial and ongoing training for food and beverage employees
- Control standards, performance, employee conduct, dress code, and sanitation
- Review colleague performance annually
- Develop merchandising strategies to meet guest and resort profiles
- Manage expenses focusing on maximizing revenue and profit
- Train colleagues on menu items and beverage programs
- Collaborate with culinary teams to ensure product quality and guest satisfaction
- Participate in department meetings
