Job Requirements

  • High school diploma or equivalent
  • Minimum 2 years culinary experience in a fast-paced kitchen environment
  • Ability to work various shifts including days, nights, weekends and holidays
  • Knowledge of cooking methods such as saute, braise, roast, poach, bake, and steam
  • Ability to follow recipes and prepare stocks, sauces, and soups from scratch
  • Good knife skills and ability to handle kitchen tools safely
  • Basic math skills for measurements and recipes
  • Physical ability to lift 40 pounds and stand for prolonged periods
  • Ability to work under pressure and meet production deadlines
  • Serve Safe certification preferred
  • Good understanding of health department food safety and sanitation standards
  • Must live within 50 miles of the hotel
  • Ability to maintain professional culinary appearance and conduct
  • Strong organizational and multitasking skills

Job Qualifications

  • Good general knowledge and fluidity of line stations including saute, grill, pantry and fry station
  • Good understanding of cooking and preparation principles such as saute, braise, roast, poach, bake, steam
  • Ability to follow recipes and make from scratch basic stocks, sauces, vinaigrettes, coulis, purees and soups
  • Firm understanding of a la minute preparation
  • Minimum 2 years culinary experience in a fast-paced hotel or restaurant kitchen
  • Fine dining experience preferred
  • Serve Safe certification preferred or good understanding of local health department food handling and sanitation standards
  • Basic math skills to understand and implement recipes and measurements
  • Good eye-hand coordination for using kitchen equipment and professional cutlery
  • Ability to work a variety of shifts including days, nights, weekends and holidays
  • Professional culinary appearance, attitude and performance with ability to multi-task in fast pace environment
  • Ability to cook most proteins to proper internal temperature
  • Some meat and seafood fabrication knowledge preferred
  • Good knife skills and understanding of industry standard knife cuts
  • Prior experience with different cuts of beef, pork, seafood, round and flat fish
  • Culinary or vocational school degree or certificate a plus
  • Ability to move, bend, lift, carry, push, pull and place objects up to 40 pounds
  • Ability to stand or walk for extended periods
  • Experience with repetitive motion
  • Must live within 50 miles of hotel

Job Duties

  • Prepare and cook food and perform other related culinary functions
  • Demonstrate strong culinary skills and have advanced level proficiency
  • Accomplish most tasks with minimal supervision and some guidance
  • Understand various cooking methods, ingredients, equipment and procedures
  • Correctly utilize and prepare food with products and ingredients in use or development
  • Maintain knowledge of traditional knife skills and apply in the kitchen
  • Move and cover different stations following Omni and chef standards
  • Perform job functions with attention to detail, speed and accuracy
  • Execute soups and sauces with minimal supervision
  • Prioritize, organize and follow-through on tasks
  • Work well under pressure to meet production schedules and guest orders
  • Maintain knowledge of EcoSure and health department standards
  • Work with Sous Chefs to set up and stock stations with necessary supplies
  • Perform opening checklist with minimal supervision
  • Set up workstation with required mise en place, tools, equipment and supplies
  • Maintain a positive and professional approach with coworkers and customers
  • Follow recipe cards and prep lists accurately
  • Complete opening and closing procedures
  • Use equipment and tools properly and safely
  • Ensure food quality, timing, and simultaneous output
  • Communicate assistance needs to Sous Chefs during busy periods
