Job Requirements

  • Minimum 2 years culinary experience in a fast-paced kitchen
  • Culinary or vocational school education preferred
  • Ability to work various shifts including weekends and holidays
  • Serve Safe certification or equivalent knowledge of food safety standards
  • Ability to lift and carry up to 40 pounds
  • Ability to stand and walk for extended periods
  • Must live within 50 miles of the hotel

Job Qualifications

  • Good general knowledge and fluidity of line stations including Sauté, Grill, Pantry and Fry Station
  • Understanding of cooking and preparation principles such as sauté, braise, roast, poach, bake, steam
  • Ability to follow recipes and make basic stocks, sauces, vinaigrettes, coulis, purees and soups from scratch
  • Firm understanding of a la minute preparation
  • Minimum 2 years culinary experience in a fast-paced hotel or restaurant kitchen, fine dining preferred
  • Serve Safe certification preferred or good understanding of local health department requirements for safe food handling and sanitation
  • Basic math skills to implement recipes and measurements
  • Good eye/hand coordination for kitchen equipment and cutlery
  • Ability to work various shifts including days, nights, weekends and holidays
  • Professional culinary appearance, attitude, and performance
  • Ability to multi-task in a fast-paced environment
  • Ability to cook most proteins to proper internal temperature per order
  • Some meat and seafood fabrication knowledge preferred
  • Good knife skills and understanding of standard knife cuts like dice or julienned
  • Prior experience with different cuts of beef, pork, seafood, and fish
  • Culinary or vocational school degree or certificate a plus
  • Ability to move, bend, lift, carry, push, pull objects up to 40 pounds
  • Ability to stand or walk for extended periods
  • Requires repetitive motion
  • Candidate must live within 50 miles of the hotel

Job Duties

  • Prepare and cook food and perform other related culinary functions
  • Demonstrate strong culinary skills and have advanced level proficiency in culinary functions
  • Accomplish most tasks with minimal supervision and some guidance depending on complexity and skill level
  • Have a solid understanding of various cooking methods, ingredients, equipment and procedures
  • Correctly utilize and prepare food with most all products and ingredients used in the kitchen
  • Maintain knowledge of traditional knife skills and consistently apply such skills in the kitchen
  • Move/cover different stations following Omni and Chef standards
  • Perform job functions with attention to detail, speed and accuracy
  • Execute soups and sauces with minimal supervision
  • Prioritize, organize and follow-through tasks
  • Work well under pressure to meet production schedules and guest order timelines
  • Maintain good understanding of cooking methods, ingredients, equipment and procedures
  • Maintain, correct and follow Eco sure and health department standards
  • Work with Sous Chefs to set up and stock stations with necessary supplies and prep lists
  • Perform opening checklist with minimal supervision
  • Set up workstation with required mise en place, tools, equipment and supplies according to standards
  • Maintain a positive and professional approach with coworkers and customers
  • Follow recipe cards and prep lists accurately
  • Comprehend and follow recipes
  • Complete opening and closing procedures
  • Maintain knowledge of proper use and maintenance of equipment
  • Ensure food quality and timing
  • Communicate assistance needed during busy periods to Sous Chef to ensure optimum service to guests
