The role of Executive Sous Chef at Excalibur's Round Table Buffet is a critical leadership position within MGM Resorts International’s culinary team. This role is designed for a motivated and experienced culinary professional who will drive kitchen operations and inspire a team aligned with the winning MGM brand. The Executive Sous Chef will support operational success is both financial and qualitative, ensuring excellence in menu execution, inventory management, staff development, and guest satisfaction.
In this position, you will be responsible for leading day-to-day kitchen activities, managing budgets, controlling labor productivity, scheduling staff, and overseeing food inventory to maximize profitability while maintaining stringent health and safety standards. You will play an integral part in developing and implementing tactical plans alongside the Executive Chef to meet both short-term and long-term business goals.
Moreover, the Executive Sous Chef will ensure full compliance with company policies, operating procedures, and regulatory standards. Job Requirements
- Bachelor's degree or equivalent experience
- 2+ years of prior relevant experience working in culinary environment
- Previous experience managing employees under collective bargaining agreement preferred
- Experience working in a high-volume restaurant or luxury/fine-dining restaurant preferred
- Strong communication and interpersonal skills
- Ability to lead and motivate a team
- Commitment to maintaining high standards of health and safety
- Flexibility to work varied shifts including weekends and holidays
Job Qualifications
- Bachelor's degree or equivalent experience
- 2+ years of relevant culinary experience as a chef
- Experience managing employees under collective bargaining agreements preferred
- Experience in high-volume or luxury/fine-dining restaurants preferred
- Strong leadership and team management skills
- Knowledge of food safety standards and kitchen operations
- Ability to develop and execute culinary strategies and menus
