As the Executive Sous Chef, you will assist the executive chef in managing the operations of Remy/Enchante, two French-inspired luxury restaurants recognized for their exquisite menus crafted by acclaimed Michelin-star chefs. Your responsibilities include collaborating on menu planning, ensuring every dish meets the highest standards of flavor and presentation, and overseeing the daily kitchen operations. Leading the culinary team, you will provide training and mentorship, encouraging creativity and involvement in menu development. Managing inventory, controlling costs, and maintaining strict adherence to USPH and HACCP standards are also critical elements of your role.

This shipboard position requires you to act as the executive chef’s deputy, taking full responsibility for Remy/Enchante operations during their absence. You will serve as a vital link between the kitchen and customers, working closely with the Maitre d'Hotel and front-of-house team to ensure seamless service and guest satisfaction. The role demands an adaptable, skilled culinary leader with proficiency in all kitchen stations and the ability to thrive within a multicultural team in a confined environment.

Job Requirements

  • Five years or more of leadership experience
  • Minimum of two years as a sous chef in fine dining
  • Proficient in culinary fundamentals and able to verbalize them
  • Ability to work with a multicultural team in a confined environment
  • Proficient in safe food handling, HACCP and USPH standards
  • Willingness to live and work onboard a cruise ship
  • Valid passport and C1/D seaman's visa
  • Completion of pre-employment medical
  • Obtain criminal background check
  • Drug and alcohol testing compliance
  • Bring approved work shoes
  • Willingness to follow safety and emergency responsibilities onboard ship
  • Ready to share a confined cabin with other crew members
  • Appreciation of working in a multicultural environment governed by strict rules

Job Qualifications

  • Minimum of two years working as a sous chef in a fine dining establishment
  • Proficient in all stations in the kitchen
  • Proficient in safe food handling, HACCP and USPH standards
  • Knowledge and proficiency in following and converting recipes
  • Demonstrates a dedication to culinary career with a desire to grow within the industry
  • Minimum of two to three years of formal culinary training is preferred
  • Prior ship experience is preferred

Job Duties

  • Collaborate with the executive chef to plan and deliver menus
  • Ensure every food item leaving the kitchen is of the highest quality in flavor and presentation
  • Lead all aspects of the Remy/Enchante culinary team, including training and mentoring, while inspiring and encouraging them to get involved in menu creation
  • Oversee inventory and control costs
  • Act as a link between the kitchen and customers, while connecting with the Maitre d'Hotel and front-of-house team
  • Responsible for maintaining all applicable USPH and HACCP standards in the Remy/Enchante galley
  • Be responsible for the Remy/Enchante operation when the executive chef is not available
