The Role: Under the direction of the Executive Chef, the Assistant Chef will play a vital role in supporting all culinary operations at the Hawaii Convention Center. This position requires oversight and direct involvement in production, operations, and sanitation across all culinary and stewarding areas within the facility. The Assistant Chef will aid in maintaining the highest sanitation standards to achieve and uphold top ratings by the Health Department. In this capacity, you will assist in training staff, promoting safety, and adhering to strict accident prevention measures. Your culinary expertise and creativity will be leveraged in recipe development and testing to ensure quality presentation and preparation standards consistently meet or exceed expectations. You will work closely on the planning and development of Kosher menu items, ensuring strict compliance with Kosher dietary standards while balancing operational considerations. Effective control of labor and expenses through scheduling, budgeting, purchasing, and inventory management will be essential to operating within established budget guidelines. This leadership role demands strong collaboration with the Executive Chef on food production, menu development, and quality assurance, including final tastings before events. Additionally, managing kitchen equipment maintenance, ensuring timely product delivery at appropriate temperatures, and conducting pre-shift staff meetings to align team objectives will be your responsibilities. This role requires a commitment to the highest standard of food service excellence, leadership in a fast-paced, high-volume environment, and the flexibility to work extended hours including evenings, weekends, and holidays. Job Requirements
- Culinary degree or certified apprenticeship completion
- 2-3 years of management experience in high-volume or contract foodservice venues
- Experience with Kosher food preparation and supply chain management
- Excellent communication skills

Job Qualifications
- Culinary degree or graduation from a certified apprenticeship program
- Minimum of 2-3 years management experience in high-volume venues or contract foodservice industry for sports and entertainment venues
- Excellent written and verbal communication skills
- Ability to multi-task and prioritize in a deadline-oriented environment
- Experience managing Kosher supply chains
- Experience cooking in Kosher kitchens
- Experience training and coaching staff in Kosher food preparation and practices
- Strong commitment to delivering a high level of customer and client service
- Demonstrated initiative, leadership, and management skills
- Experience managing in a union environment is a plus

Job Duties
- Assists in maintaining high standards of sanitation and cleanliness
- Aids the Executive Chef in maintaining the highest possible rating from the Health Department
- Assists in the training, safety, sanitation and accident prevention controls within the kitchen
- Helps to develop and test recipes as well as techniques for food preparation and presentation to ensure high quality
- Assist the Executive Chef in the planning and development of Kosher menu items and recipes for Hawaii Convention Center
- Assists in the assurance of consistent food qualities in both presentation and preparation
- Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control while working within budget guidelines
- Helps ensure that all recipes and methods are being followed
- Ensures the maintenance of kitchen equipment
- Reports and documents hazardous conditions or unsafe practices within the work environment
- Contributes to the creation of menu specifications for all food items including all pricing information
- Works directly with the Executive Chef on food production and menu development
- Ensures high and consistent food qualities in both presentation and preparation
- Assists in the checking and tasting all food before events take place
- Conduct meetings/pre-shifts to update staff on daily goals and objectives
- Work to make sure all products go out in a timely manner and stay within required temps
- Must be the 'Last Person' out of the kitchen and ensure proper closing
- Will also report to the Shift supervisor before they depart the building
- Other duties as assigned by Executive Chef
- Ensure all closing duties for kitchen are completed
- Conduct training of staff as assigned
