The Executive Sous Chef at Luminary Hotel & Co. holds a crucial leadership position within the culinary department, tasked with driving culinary excellence across banquet operations and multiple restaurant outlets. This full-time management role demands a forward-thinking and hands-on culinary leader with proven experience in high-volume banquet production kitchens and multi-outlet hotel environments. Working closely with the Executive Chef and Food & Beverage leadership team, the Executive Sous Chef ensures the delivery of exceptional guest experiences, operational efficiency, and the achievement of financial performance goals.
The responsibilities of this role encompass full oversight of banquet and catering culinary operations during the Executive Banquet Chef’s absence, guaranteeing seamless execution and continuous operational standards. This includes supervising daily production, maintaining consistent food quality and presentation, adhering to strict health and safety regulations, and supporting cost control, inventory management, and labor efficiency. Moreover, the Executive Sous Chef actively collaborates with culinary leadership to interact with guests and event clients, monitors guest satisfaction trends, and assists in developing seasonal menus that reflect current culinary trends and regional influences.
In addition to operational oversight, the Executive Sous Chef plays a vital role in team development by mentoring culinary staff, conducting training and performance evaluations, managing scheduling and disciplinary actions, and cultivating a culture of accountability, recognition, and professional growth. Candidates must demonstrate strong financial acumen, including expertise in cost control, labor management, and menu engineering, and possess the ability to orchestrate multiple simultaneous events while maintaining timing precision, food quality, and presentation standards.
Physical demands of the role include the ability to stand throughout the entire shift and occasionally exert significant physical force. It also requires strong mental demands such as making sound judgments quickly, working effectively in a high-pressure kitchen environment, managing multiple tasks, handling diverse personalities, and maintaining confidentiality. Job Requirements
- Minimum of 5 years of progressive management experience
- Minimum of 3 years of experience in a hotel or fine dining restaurant
- Leadership skills to motivate and develop staff and ensure accomplishment of goals
- Ability to compose menus that reflect the marketplace with unique flare
- Ability to work effectively under time constraints and deadlines
- Previous experience analyzing P and L statements a plus
- Ability to stand during entire shift
- Ability to exert up to 50 pounds of force occasionally
- Ability to make sound judgments quickly
- Ability to work effectively in high demand kitchen environments
- Ability to work independently and provide direction to others
- Ability to manage differing personalities and maintain confidentiality
