The Executive Sous Chef role at Gibsons Restaurant Group is a pivotal position responsible for overseeing and coordinating the activities of cooks and kitchen staff, ensuring that food preparation and presentation meet the highest standards. This role plays a critical part in managing all aspects of food purchasing, preparation, and execution under the guidance of the Executive Chef. The Executive Sous Chef is tasked with maintaining consistency and quality across all recipes, enforcing kitchen health and safety regulations, and managing the kitchen team’s performance and training. This position demands a leader who is not only skilled in culinary techniques but also adept at managing kitchen operations, controlling budgets, and fostering a positive and productive work environment. The Executive Sous Chef must be knowledgeable about food and wine pairings, capable of representing the restaurant brand externally, and committed to upholding the Gibsons philosophy of hospitality, quality, family, and value. With responsibilities extending to overseeing cleaning services, equipment maintenance, and the implementation of systems for cost and labor tracking, this role requires a detail-oriented professional with strong communication skills and a proactive approach to problem-solving. Job Requirements

  • Graduate of a recognized culinary school
  • minimum 5 years of related culinary experience
  • thorough knowledge of food preparation techniques

  • ability to enforce health and safety regulations
  • proficiency in managing budgets and kitchen operations

Job Qualifications

  • Graduate of a recognized culinary school and 5 years related experience
  • current knowledge of regional and national trends in food and beverage
  • must possess thorough knowledge of all food preparation techniques and styles
  • demonstrated proficiency in supervising and motivating subordinates

Job Duties

  • Oversee all food preparation, production, and presentation
  • ensure that recipes are followed and preparation and presentation are adhered to consistently
  • ensure production of all recipes, both prep and plate, are consistent and of superior quality
  • plan production schedules, implement and manage execution
  • train staff for associated job functions with their assigned roles as needed
  • resolve all customer opportunities related to food quality and execution
  • understand and adhere to all GRG kitchen operation and management procedures
