The Executive Sous Chef position with an Asian and Sushi focus is a pivotal role within Wolfgang Puck Catering's high-volume, full-scratch café and catering operations. Job Requirements

  • Culinary training or degree, or equivalent hands-on experience
  • Prior professional experience preparing sushi in a high-volume kitchen environment
  • Experience working with Asian cuisine
  • Knowledge of food safety and sanitation regulations, especially concerning raw fish
  • Strong leadership and team management skills
  • Excellent organizational and multitasking abilities
  • Ability to work Monday through Friday in a fast-paced culinary setting
  • Effective communication and collaboration skills
  • Commitment to maintaining quality and consistency in food preparation

Job Qualifications

  • Experience supporting culinary operations in a full-scratch, high-volume kitchen environment
  • Hands-on experience preparing sushi, including raw fish handling, knife skills, and sushi production techniques
  • Background in Asian cuisine with the ability to execute dishes consistently at scale
  • A collaborative leadership style that supports learning, engagement, and accountability
  • Strong organizational skills with the ability to manage multiple priorities during service
  • Knowledge of food safety, sanitation, and best practices related to sushi and raw seafood
  • Prior professional experience preparing sushi in a restaurant, café, catering, or workplace dining environment
  • Demonstrated knowledge of proper sushi rice preparation, fish handling, and presentation standards
  • Experience in workplace dining, corporate dining, or large-scale food service environments
  • Experience supporting catered events alongside daily café operations
  • Culinary training or degree, or equivalent hands-on experience
  • Familiarity with inventory management and food cost awareness for specialty ingredients

Job Duties

  • Support daily culinary operations for a high-volume, full-scratch café and catering program with a strong focus on Asian cuisine and sushi
  • Lead hands-on preparation and execution of sushi offerings, including knife work, rice preparation, rolling, and presentation
  • Partner with the Executive Chef to develop and execute menus that balance authenticity, quality, speed, and consistency
  • Oversee production and service for café meals and catered meetings and events, ensuring smooth and organized execution
  • Coach and support culinary team members through clear communication, training, and example-driven leadership
  • Help ensure food quality, taste, freshness, and presentation consistently meet established standards
  • Maintain food safety, sanitation, and workplace safety practices, particularly as they relate to raw fish handling and sushi production
