The role of Executive Sous Chef at Restaura is a hands-on, results-driven position pivotal to the daily culinary operations within our client facilities. Reporting directly to the Executive Chef and collaborating closely with the Director of Hospitality (General Manager), this role is instrumental in supporting operational excellence, food safety, and team engagement. The Executive Sous Chef works in partnership with the Executive Chef and hospitality leadership to ensure that every meal served meets the highest standards of quality, consistency, and presentation, designed specifically to cater to the needs of elderly residents.

This position requires a culinary professional who is not only skilled in preparing balanced, high-quality meals but also adept at leading and coaching kitchen staff to maintain consistency across all kitchen functions. The Executive Sous Chef will play an essential role in menu execution, batch cooking, culinary team management, inventory control, and compliance with food safety regulations. The role calls for a leader who can step in and lead the kitchen in the absence of the Executive Chef, manage daily kitchen operations efficiently, and foster a warm, welcoming dining atmosphere that feels home-like.

The Executive Sous Chef will engage in activities ranging from supporting menu rollouts and specials to supervising, training, and maintaining a clean and organized kitchen environment. Collaboration with culinary staff, servers, and leadership is key to ensuring smooth service delivery. This role also emphasizes maintaining meticulous food preparation, accommodating dietary restrictions, ensuring timely service, and maintaining safety and sanitation standards.

Ideal candidates will have strong foundational culinary skills, experience in a supervisory role, and a dedication to fostering a positive team environment. Experience in senior living, healthcare, or high-volume food service settings is strongly preferred. Candidates must hold or be able to obtain ServSafe certification and demonstrate excellent communication and time management skills. Physical requirements include the ability to stand for extended periods, lift up to 50 pounds, and occasionally travel for training or team support.

Job Requirements

  • 5+ years of culinary experience, including 1-2 years in a leadership or supervisory role
  • Strong foundational culinary skills and knowledge of food safety and sanitation
  • Experience in senior living, healthcare, or high-volume foodservice preferred
  • ServSafe certification or ability to obtain
  • Strong communication, teamwork, and time-management skills
  • Ability to learn and use culinary and operational technology tools
  • Ability to stand for extended periods and work in high-heat environments
  • Ability to lift up to 50 pounds
  • Occasional travel for training or team support

Job Duties

  • Execute menus as designed, ensuring consistency, quality, and presentation
  • Prepare balanced, high-quality meals tailored to elderly residents
  • Support batch cooking processes while incorporating fresh techniques and creative enhancements
  • Assist with menu rollouts and specials as directed by the Executive Chef
  • Support daily kitchen operations, ensuring compliance with sanitation, safety, and food handling standards
  • Supervise, train, and support culinary staff during assigned shifts
  • Lead shift huddles and assist with on-the-job training and coaching
  • Maintain an organized, clean, and efficient kitchen environment
  • Step in to lead the kitchen in the Executive Chef’s absence
  • Prepare and plate meals accurately and on time, maintaining proper temperatures
  • Accommodate dietary restrictions and modified diets
  • Assist with service execution and provide coverage when needed
  • Foster a positive, resident-focused dining atmosphere
  • Assist with inventory management, ordering, and proper food storage
  • Support food and labor cost controls by following production plans and waste-reduction practices
  • Help plan quantities for daily and upcoming meal periods
  • Work closely with culinary staff, servers, and leadership to ensure smooth service
  • Communicate staffing needs, prep requirements, and operational challenges clearly and professionally
  • Participate in required training programs
  • Support adherence to state and federal regulations
  • Reinforce food safety, cleanliness, and workplace standards on the floor
  • Assist with daily kitchen production and closing responsibilities
  • Support a warm, welcoming, and home-like dining environment
  • Act as Dining Supervisor when needed
