This particular role is a shipboard position critical to the daily and long-term operation of the Galley department aboard Disney Cruise Line vessels. The person in this role will take charge of managing all Galley staff, ensuring smooth, efficient culinary operations across multiple outlets. Responsibilities include overseeing food tastings, recipe consistency, and stock control specifically for seafood and meat production areas. Collaboration with the Hotel Stores Manager on inventory controls is essential, along with ensuring all requisitions and stock procedures adhere to company standards. This role requires monitoring culinary standards closely and ensuring sanitation practices meet Disney Cruise Line and US Public Health requirements. Attention to food cost budgets and cost controls is also vital to maintain profitability and operational efficiency.
Beyond culinary oversight, this position involves managing facilities and equipment upkeep and supervising waste management practices such as garbage separation and disposal. It also calls for effective coordination of all food offerings including special group requests, facilitating departmental meetings, and compliance with all maritime policies and safety regulations. A key aspect of the job is handling guest complaints promptly and professionally, contributing directly to the exceptional guest experience Disney Cruise Line is known for.
The role demands a candidate with a minimum of four years’ experience in high-volume galley or food and beverage operations, certified as a working chef or equivalent culinary arts degree, with strong functional knowledge of ship-based food operations. Excellent knowledge of food and beverage products, cost calculation skills, and understanding of international beverage laws are essential. Candidates must be at least 21 years old, fluent in English, and willing to live and work onboard the vessel, adapting to a demanding work schedule of 70 to 84 hours per week with limited time off. Compliance with Disney’s appearance guidelines, sharing cabins with other crew members, and flexibility in job duties and locations are also requirements. Preferred qualifications include prior ship experience and college education or equivalent industry experience.

Job Duties
- manage accountability for all galley staff for day-to-day and long-term operation
- ensure recipe format, pictures, etc. are consistent in all food outlets
- organize food tastings and dummy runs of new products and menu content
- facilitate weekly meetings with galley leadership
- discuss operational issues and updates of new products
- oversee ordering and stock control of the seafood and meat production areas
- work with hotel stores manager on inventory controls
- ensure that all requisitions and stock control procedures in all outlets are being followed
- hold galley leaders responsible for proper requisitioning
- monitor all culinary standards
- ensure disney cruise line and usph sanitation requirements are met in area of responsibility
- meet food cost budgets and targets as set by the food manager onboard
- monitor cost control
- ensure facilities and equipment are maintained and in good working order
- monitor/implement garbage separation and disposal procedures
- implement and monitor location operating guidelines
- handle and resolve guest complaints
- monitor handling, maintenance, and reordering of operating equipment
- coordinate all food offerings including group offerings and special requests
- facilitate department meetings
- execute additional job responsibilities as assigned by dcl leadership based on operational need
- comply with all company set policies and procedures, along with all maritime and ship rules, regulations and procedures
- participate in emergency duties as specified in the ship assembly plan
