Job Description

Seminole Hard Rock Hotel & Casino Hollywood is the flagship casino resort of Hard Rock International, owned and operated by the Seminole Tribe of Florida. This world-class entertainment, gaming, and hospitality destination boasts a $1.5 billion expansion completed in October 2019, making it one of the most prestigious resorts in the United States. The resort offers 1,271 upscale guestrooms including 638 in the iconic Guitar Hotel, 168 in the Oasis Tower with unique swim-up suites, and 465 redesigned rooms in the Hard Rock Hotel. Guests can enjoy a variety of amenities such as a "Bora Bora" style lagoon with private cabanas and butler service, a 42,000 square-foot Rock Spa & Salon, and a 13.5-acre recreational waterpark featuring swimming, kayaking, and paddleboarding. The resort also features 19 dining outlets, 20 bars and lounges, an expansive gaming floor with 3,100 slot machines, 195 table games, and a 45-table poker room. The role of Executive Sous Chef at Seminole Hard Rock Hotel & Casino Hollywood plays a vital part in the culinary operations of this extensive resort. Reporting to the Executive Chef, the Executive Sous Chef assists in planning, directing, and supervising all food preparation and cooking activities throughout the resort’s diverse restaurants and banquet facilities. The position requires a highly skilled culinary professional who can maintain the highest standards of food quality and hygiene, oversee food production teams, and ensure seamless coordination among different food production areas. The Executive Sous Chef will be responsible for managing food costs, enforcing compliance with health and safety regulations, and fostering a positive work environment that aligns with the resort’s mission and values including Communication, Integrity, Fun, Respect, Accountability, Passion, and Dedication. This leadership role also contributes to staff development through training, coaching, and mentoring, with a special focus on supporting Seminole Tribe members enrolled in the Tribal Career Development program. The ideal candidate will demonstrate excellent communication skills, superior organizational abilities, and a commitment to delivering an exceptional guest experience in a dynamic, fast-paced environment. Job Qualifications

  • Culinary Arts degree preferred
  • Minimum of six years in the role of Executive Chef or Sous Chef of an outlet in a high volume, high-end operations environment or equivalent combination of education and experience
  • Ability to work flexible schedules including nights, weekends, and holidays

Job Duties

  • Conduct themselves in accordance with all Gaming Commission regulations and Seminole Tribe of Florida departmental policies and procedures
  • Responsible for training and supervision of food production personnel
  • Coordinate activities at different food production areas as required by the Executive Chef
  • Monitor food costs and assist with requisition of daily food purchase orders
  • Ensure that the production department maintains the standards set by local and state health department codes
  • Directly communicate with all supervisors and line team members on daily needs, requirements and expectations
  • Develop department members' knowledge and skills through education, training, coaching, corrective counseling, etc.
  • Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations
  • Conduct personal behavior and select, train, coach, counsel, appraise and retain direct reports who consistently perform actions and behaviors that reinforce the Company’s Mission and Values
  • Demonstrate commitment to assisting in the development of Seminole Tribe members participating in the Tribal Career Development program and act as a personal mentor/career advisor
  • Ensure prompt and discreet notification to appropriate management and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations
  • Stay abreast of current trends and practices within area of responsibility and communicate pertinent information
  • Promote positive customer and public/team member relations
  • Maintain a clean, safe, hazard-free work environment
  • Perform other duties as assigned
