Job Requirements

Job Qualifications
- High school diploma or equivalent
- 2-year culinary degree preferred or comparable culinary experience
- Experience with multiple levels of cuisine and different kitchen equipment
- Strong interpersonal and communication skills, both verbal and written
- Knowledge of food handling, preparation principles and procedures
- Ability to multitask and prioritize effectively
- Strong attention to detail and organizational skills
- Positive and enthusiastic attitude
- Experience in country club environment preferred
- Ability to supervise kitchen food production employees in absence of Executive Chef
- Ability to work calmly in fast-paced environments
- Flexibility to work evenings, weekends, and holidays
Job Duties
- Prepare or directly supervise kitchen staff in daily food preparation to ensure adherence to club standard recipes
- Assist in monthly inventory process, pricing, cost controls, requisitioning, and issuing for food production
- Assist Executive Chef with supervision and training of employees, sanitation and safety, menu planning, and related production activities
- Ensure proper staffing for maximum productivity and high quality standards, control food and payroll costs to achieve profitability
- Monitor cleanliness and maintenance standards of equipment and collaborate with Executive Chef and facilities manager on upkeep
- Perform ordering, scheduling, menu costing, recipe building, and other administrative duties under Executive Chef direction
- Work any stations as needed in support of Executive Chef
- Collaborate with Front of House managers for education and growth of service standards
- Assist in food procurement, delivery, storage, and issuing of food items
- Expedite food orders during peak service hours
- Work with Sous Chefs and Front of House managers on buffet and banquet presentations
- Check mise en place before service and inspect presentation of food items to meet quality standards
- Report and assist in resolving member and guest complaints with Executive Chef
- Develop culinary vision and creativity for all club outlets
- Maintain proper sanitation practices including personal hygiene
- Attend all relevant Food and Beverage BEO and staff meetings
- Perform other tasks as assigned by Executive Chef or GM/COO
