We are currently seeking an Executive Pastry Sous Chef to join our dynamic team. This role offers a unique opportunity to collaborate directly with our Michelin-starred, James Beard awarded Master Chef, making it an ideal position for someone passionate about pastry arts and eager to advance their career in a demanding but rewarding setting. The Executive Pastry Sous Chef will lead the daily operations of our bakery and pastry department, ensuring that all creations meet the high standards our restaurant is known for. Responsibilities will include managing quality control, overseeing staff, coordinating closely with the Culinary Director and Executive Chefs, and innovating pastry offerings. The successful candidate will exhibit strong leadership qualities combined with technical expertise in pastry arts, so they can coach and develop their team effectively while maintaining an efficient and organized workspace.
This position demands a high level of skill in both artistic and technical aspects of pastry preparation, as well as organizational prowess. Tasks will range from product planning, preparation, inventory management, costing, scheduling, to research and development. The candidate must be capable of solving problems proactively, adapting to fast-paced and changing conditions, and maintaining composure under pressure. Job Requirements
- Minimum 2-3 years experience in a Michelin-starred pastry chef role
- Strong international pastry cuisine skills
- Excellent recipe following and execution abilities
- Knowledge of pastry ingredients and techniques
- Demonstrated leadership and team management experience
- Ability to work under pressure in a fast-paced environment
- Physical stamina for prolonged periods in a kitchen
- Strong problem-solving and communication skills
Job Qualifications
- Proven 2-3 years of experience working as a pastry chef in a fast-paced environment with a minimum of 2 Michelin Stars in a similar capacity no exceptions
- Expert skill set in international cuisine and technique
- Ability to follow recipes and instructions accurately
- Very good knowledge of pastry arts and ingredients
- Confident culinary techniques and skills with the drive for excellence under pressure
- Good sense of planning and preparation for the day ahead
- Diligent and meticulous in making and receiving orders
- Strong organizational and time management skills
- Ability to problem solve and react quickly to any issues which arise during a shift
- Physically able to stand kneel bend and stand for extended periods every day in a hot kitchen
Job Duties
- Lead the daily management of the bakery and the entire pastry staff ensuring quality control measures are being adhered to
- Follow through with the Culinary Director Executive Chef’s and Executive Pastry Chef’s orders
- Demonstrate strong kitchen and leadership skills with a proven ability to coach and develop staff
- Plan prep set up and prepare quality products in all areas of the Pastry Bake Shop including costing scheduling inventory hiring training and research and development
- Encourage employees to come up with operational innovations
- Supervise workers to ensure compliance with occupational health and safety standards
- Develop workable solutions to solve routine department and guest-related problems
