The role of Executive Pastry Chef (EPC) at Carolina Country Club is a vital leadership position within the culinary team, working closely with the Executive Chef, Patrick Colley. This role demands a passionate and highly skilled individual who thrives in a high-volume, quality-focused environment, with previous club experience preferred. The EPC is responsible for maintaining the highest standards in pastry and baking operations by producing diverse and distinctive pastry offerings that combine traditional and progressive culinary styles. As a critical member of the team, the EPC will develop, recommend, and produce daily and weekly dessert features alongside custom-designed creations for private events and club banquets. Ensuring the consistency and quality of all pastry service, the EPC will supply detailed recipes, train pastry cooks, and oversee skill development.
A successful Executive Pastry Chef at Carolina Country Club will be visible and responsive to members, occasionally walking the dining rooms to listen to feedback and address inquiries. The individual will lead by example, crafting intricate table and pastry decorations from sugar paste and icings, and maintaining open and efficient communication with the Executive Chef as well as front-of-house management and staff to ensure seamless service delivery. Strong mental fortitude and the ability to maintain composure under pressure are essential, alongside a commitment to the highest standards of sanitation and safety.
The person in this position is expected to be a genuine craftsperson with a deep understanding of scratch baking and pastry production, demonstrating proven expertise in both banquet and a la carte dessert service. Job Requirements
- Minimum of 5 years pastry chef experience
- previous experience in a high-volume quality operation
